CUORE DI CHEESE CAKE AI FRUTTI DI BOSCO/HEART OF CHEESE CAKE WITH THE BERRIES




Ingr. Per uno stampo a cuore medio (oppure uno stampo a cerniera da 24 cm. Diametro)
 Zucchero di canna per una base croccante
PER LA BASE:
180 gr. fette biscottate integrali
120 gr. margarina
100 gr. zucchero di canna
2 cucchiaini cannella in polvere
PER LA CREMA:
250 gr. formaggio cremoso (io ho usato il Philadelphia duo)
Pigiate e livellate bene il composto....
200 gr. panna da cucina a lunga conservazione
100 gr. zucchero di canna
1 cucchiaio di farina
1 pizzico sale
1 limone (succo spremuto)
4 uova – tuorli più chiare montate a neve ferma
150 gr. frutti di bosco misti surgelati.
COME PROCEDERE:
Preparare la base:
Tritare finemente nel mixer le fette biscottate e mescolatele alla margarina fusa, allo zucchero e alla cannella. Con questo impasto foderate il fondo di uno stampo a cuore rivestito con carta da forno. Premete bene con le mani per far aderire e livellate la superficie in modo che sia uniforme e dello stesso spessore.
Preparare la crema:
Incorporate le chiare montate a neve ferma....
in una ciotola sbattete i tuorli con lo zucchero, aggiungete un pizzico di sale, la farina ed il formaggio ammorbidito con la forchetta. Diluite con la panna e il succo di limone, aggiungete i frutti di bosco e mescolate bene fino ad ottenere una crema liscia. Montate a neve ben ferma gli albumi ed incorporateli delicatamente alla crema facendo un movimento dal basso verso l’alto. Versate la crema sulla base e poi infornate a 180°C per circa 45 minuti. Dopo i primi 20 minuti di cottura abbassate la temperatura a 160°C.
Sfornate quando la superficie sarà ben colorita. Lasciate raffreddare completamente prima di togliere la carta da forno e servire su un piatto da portata.
Versate la crema sulla base ....
ENGLISH TRANSLATION:
HEART OF CHEESE CAKE WITH THE BERRIES 
Ingr. For a medium heart mold (or a  24 cm. Diameter stamp) 
FOR THE CRUST BASE: 
180 gr. whole weat  toasted slices
120 gr. Margarine 
100 gr. Cane sugar 
2 teaspoon cinnamon powder 
FOR THE CREAM: 
250 gr. Cream cheese (I used the "Philadelphia Duo")
200 gr. Cooking cream long-storage
100 gr. Cane sugar
1 tablespoon flour 
1 pinch salt
1 lemon (juice)
4 eggs - egg yolks plus the whipped white.
150 gr. Frozen mixed berries. 
HOW TO PROCEED: 
Prepare the base: 
finely chop in the mixer the toasted slices and mix the melted margarine, sugar and cinnamon. With this dough lined the bottom of the mold covered with baking paper. Press with your hands  and level the surface so that it is uniform and to the same thickness.

Prepare the cream: 
in a bowl beat the egg yolks with the sugar, add a pinch of salt, flour and cheese softened with a fork.
Dilute with cream and lemon juice, add berries and mix well to obtain a smooth and creamy compound. Mounte to firm snow the egg whites and gently incorporate them to the  compound doing a movement from the bottom upwards. Pour the cream on the crust base and then bake at 350°F for about 45 minutes.
After the first 20 minutes of cooking lower the temperature to 320°F

Baked when the surface will be very colorful. Let cool completely before removing the paper and serve on a serving dish.
