Senza olio né burro |
Ingr. Per 8 persone
250 gr. farina
100 gr mandorle pelate e tritate
5 mele grandi
3 uova grandi
200 ml latte
1 cucchiaio cannella in polvere
1 bustina di lievito vanigliato
2 limoni (scorza grattugiata e succo)
1 pizzico di sale
Poco burro e pangrattato per la teglia
Zucchero a velo
COME PROCEDERE:
Grattugiate la scorza dei limoni e poi spremeteli per
ricavarne il succo. Sbucciate le mele e tagliatele a pezzettini di 1 cm. Quindi
bagnatele con il succo di limone per non farle annerire.
In una ciotola mettete i tuorli (conservate gli albumi che
andranno poi montati a neve) con lo zucchero; quindi montate bene con le
fruste, aggiungete la scorza di limone, la farina, il lievito, la cannella e un pizzico di sale; allungate
con il latte e mescolate bene. Aggiungete quindi le mele e le mandorle, quindi
incorporate anche gli albumi montati a neve ferma.
Imburrate e cospargete con pangrattato (eliminando l’eccesso)
una teglia; versate il composto all’interno e cuocete in forno preriscaldato a
180° C per circa 40 minuti.
Fate raffreddare la torta prima di servirla cosparsa con
zucchero a velo.

1 tablespoon ground cinnamon
1 sachet of vanilla baking powder
2 lemons (grated zest plus juice)
1 Pinch of salt
A little butter and breadcrumbs for the baking pan
Confectioners' sugar for garnishing.
HOW TO PROCEED:
Grate the lemon' s zest and then squeeze them to obtain the juice. Peel the apples and chop into little pieces of about 1 cm. Then wet them with the lemon juice. In a bowl put the egg yolks (preserving egg whites that will be then mounted to snow) with the sugar; then mix well, add the lemon zest, flour, yeast, cinnamon and a pinch of salt; add milk and mix well.
At the end add the apples and almonds and the eggs whites.
Lightly butter and sprinkle with bread crumbs (eliminating the excess) a round baking pan; pour the mixture inside and cook in a preheated oven at 180°C for about 40 minutes. Let the cake to cool before serving dusted with confectioner sugar.
