TORTA DEI TETTI/ROOF TART


Ricetta tipica del cuneese
Occorrente: una tortiera di 26 cm di diametro

400 g farina "00"
3 uova
1 rosso d'uovo - per la guarnizione finale
3 cucchiai polvere lievitante per dolci
6 cucchiai latte
80 g burro - liquefatto
3 cucchiai zucchero

Il ripieno di pere, cacao , mandorle, amaretti...
PER IL RIPIENO:
1 KG pere "Decana" - tagliate a cubetti
200 g amaretti - spezzettati
2 cucchiai cacao amaro in polvere
50g mandorle - tritate
3 chiodi di garofano
10 gr cannella - (corteccia)
1 bicchiere vino rosso - (Barbera)
1 bicchierino rum
2 cucchiai zucchero

COME PROCEDERE:
Togliere la buccia alle pere e poi tagliarle a cubetti. Metterle in una
casseruola con il vino e le spezie (chiuse in una garza o in un filtro
metallico per il the) e cuocerle finchè risultano morbide. Quando sono
pronte, tirarle su con un mestolo forato (buttate il vino) e metterle in un robot da cucina
insieme alle mandorle allo zucchero, al rum, e al cacao. Azionare
l'elettrodomestico a velocità media per pochi secondi (giusto per mischiare
i vari ingredienti).
PREPARARE L'IMPASTO:
Su una spianatoia mettere la farina a fontana. Nel
centro mettete: le uova, 3 cucchiai di zucchero, il lievito e il burro
liquefatto e poco alla volta il latte (se vedete che l’impasto è troppo duro, aggiungetene dell’altro). Mischiate tutto con le mani fino ad ottenere un impasto liscio.
Quando è pronto dividetelo in due parti (una più grande dell'altra) e
ricavatene due dischi.
Foderate lo stampo apribile precedentemente imburrato e cosparso di
pangrattato  con il disco più grande, in modo che la
pasta fuoriesca un pò dalle pareti. A questo punto mettete dentro il ripieno
di pere e coprite con il disco più piccolo che deve avere lo stesso diametro
dello stampo. Sigillate i bordi portando la pasta che fuoriesce sul disco di
pasta piccolo e pizzicando con le dita tutto intorno.
Con un pennello spargere il rosso d'uovo sulla superficie e poi
bucherellarla con i rebbi della forchetta a mò di guarnizione.
Mettete in forno a 180° per circa 35 minuti. Io ho usato il forno ventilato.

ENGLISH TRANSLATION:

ROOF TART
(Typical piedmontese recipe)

*Note:For this recipe you need a cake pan of 26 cm of diameter, buttered and breadcrumbed.

              400 g    flour "00" - (all purpose flour)
                  3    eggs
                   1   egg yolk - For garishing
                3tsp   baking powder
                6tbs   milk
                 80g   butter - liquefied
               3 tbs   sugar
Butter and breadcrumb for the stamp.
FOR THE FILLING:
                 1 k   pears
               200g    amaretti
                2tbs   cocoa powder
                 50g   almonds - (Chopped)
                  3    cloves
               10 gr   cinnamon
              1 cups   red wine - (Barbera)
            1 /4 cup   rum
               2 tbs   sugar

METHOD:
Peel the pears and cut them in little cubes. Put them in a pan with  Barbera
wine; add cloves and cinnamon (closed in a gauze) and cook (mixing time to
time) at low fire till they are soft. When pears  are ready ,  put them
(without wine) in a food processor togheter with almonds, cocoa, 2TBS of
sugar and rum. Mix till you have a cream.
PREPARE THE DOUGH:
On a rolling board, put the flour and make a hole. In the middle put: 3 TBS
of sugar, the liquefied butter, the  eggs and baking powder. Mix all with
your hands adding milk time to time (you must obtain a smooth dough, so if
you need other milk put it). When dough is ready cut it in two parts and
roll out them with a rolling pin: you must obtain two disks, one bigger then
the other. Cover the stamp with the bigger one. Then fill it  with pears
cream, cover with the small disk  and seal the borders with your fingers.
Spread the surface with one egg yolk and make some holes with a fork to
decorate the surface.
Put in the oven at 180°C ( 350F) for about 35 minutes. Surface must  be
golden.

TARALLINI AI SEMI DI FINOCCHIO/TARALLINI WITH FENNEL SEEDS


I tarallini appena sfornati
Ingr. 500 gr farina 00
100 ml acqua tiepida
100 ml vino bianco a temperatura ambiente
100 ml olio oliva
20 gr sale
½ bustina lievito di birra Mastro fornaio o ½ cubetto fresco.
3 cucchiai semi di finocchio

Mescolare la farina con il sale. Fare una fontana e al centro versarvi il lievito secco aggiungendo come da istruzioni, un cucchiaino di zucchero (per quello fresco non è necessario). Aggiungere il vino, e l’olio e poi, poco alla volta, anche l’acqua. Unite infine i semi di finocchio e impastare bene fino a che l’impasto non risulta omogeneo. Formate una palla, avvolgetela nella pellicola e lasciatela riposare per circa mezz’ora. Trascorso il tempo di riposo,
prendere dei pezzetti di pasta grossi poco meno di una noce e rotolarli sulla spianatoia per formare dei serpentelli lunghi circa 10 cm e spessi 1 cm. Sovrapponete e poi incrociate le due estremità, facendo un pò di pressione. Mentre proseguite, mettete a bollire dell’acqua salata. Tuffateci dentro pochi taralli per volta e quando vengono a galla, prendeteli con una schiumarola e metteteli ad asciugare su uno straccio da cucina per 4-5 ore. Rivestite una grande teglia con della carta pergamena. Adagiatevi i tarallini lasciando poco spazio tra l’uno e l’altro. Infornate a 200° per 20 minuti o fin quando diventano dorati.
Lasciare raffreddare completamente prima di gustarli.

ENGLISH TRANSLATION: 
 
TARALLINI WITH FENNEL SEEDS
Ingr. 500 gr  all purpose flour
100 ml warm water
100 ml white wine at room temperature
100 ml olive oil
20 g salt
½ packet (4 gr.) dry yeast or ½ cube fresh (12 gr)
3 tablespoons fennel seeds

HOW TO PROCEED:
 Mix the flour with the salt. Make a fountain,  in the center  of the hole put  yeast and a teaspoon of sugar (for that fresh is not necessary). Add the wine, and oil and then, little by little, also water. Add  finally the fennel seeds and mix well until the dough is homogeneous. Make a ball,  wrap it in the film and let it rest for about half an hour. Spent the  period of rest, take pieces of dough large a little less than a walnut and roll them on a pastry board for forming little snakes  long about 10 cm and 1 cm thick. Cross the two ends, doing a bit of pressure, to make your tarallini shape. After this work, boil them (few at a time) in salted water. Tarallini are ready when they come to the surface;  take them with a skimmer and lay over  
a kitchen cloth. Let them dry for about 5 hours ( I let them overnight and bake in the morning). Cover  a large baking dish with cooking  paper.  Lay on it tarallini leaving little space between one and another. Bake at 200° for 20 minutes or until they become golden. Leave to cool completely before enjoy them.

INVOLTINI DI MELANZANE RIPIENI DI MOZZARELLA/EGGPLANT ROULADES WITH MOZZARELLA AND BASIL E BASILICO


Che goduria la mozzarella filante all'interno!


Ingr. Per 4 persone.
1 grossa melanzana
8 fette di  mozzarella tagliate spesse.
Appena sfornati
3 uova
pangrattato
10 foglie di basilico
1 cipolla piccola tagliata a pezzetti.
4 cucchiai Pecorino romano
2 cucchiai di olio di oliva
300 gr. passata di pomodoro
Olio per friggere
Sale
Pepe

COME PROCEDERE:
Preparate un sughetto  semplice: mettete a soffriggere la cipolla, appena è dorata unirvi la passata di pomodoro e due foglie di basilico. Salate, pepate e fate cuocere per circa 15 minuti.
Tagliate la melanzana in 8 fettine di 3-4 millimetri di spessore (meglio se lo fate con un’affettatrice).
In una ciotola battete le uova con un pizzico di sale.
Passate le fettine di melanzana, prima nell’uovo e poi nel pangrattato quindi  friggetele in abbondante olio bollente.  Quando sono dorate, scolatele e mettetele su carta da cucina per far assorbire l’olio in eccesso. Salarle leggermente.
A questo punto confezionate gli involtini. Ponete su ciascuna fetta  di melanzana  una fetta di mozzarella e sopra di questa una foglia di basilico, arrotolate ad involtino e fermate con degli stuzzicadenti. Mettete gli involtini in un tegame da forno cosparso con poca salsa e poi cospargeteli con una cucchiaiata di salsa di pomodoro e qualche cucchiaio di pecorino.
Infornate a 180° per circa 15 minuti. Servite caldi con contorno di insalata o patatine.

ENGLISH TRANSLATION:

EGGPLANT ROULADES WITH MOZZARELLA AND BASIL 

METHOD:
Prepare a simple tomatoes sauce: saute the onion, when it is  golden add tomato sauce and two leaves of basil. Add salt and pepper and cook for about 15 minutes. Cut the eggplant  in 8 slices 3-4 mm  thickness (better if you do so with a slicer).  In a bowl beat the eggs with a pinch of salt.
Pass  the slices of eggplant, first in the egg and then in the breadcrumbs and then fry them in abundant boiling oil. When they are golden, drain and put them on kitchen paper to absorb the excess oil. Salt lightly. At this point make roulades.
Put on each eggplant a slice of mozzarella and over it a basil leaf, roll  and stops with toothpicks. Put the rolls in a baking pan sprinkled with few tomatoe sauce and then put over them a Tbsp of tomato sauce and a few tablespoons of grated pecorino cheese. Bake at 180° for about 15 minutes. Serve hot with salad or chips side dish.

CANNELLONI DI BROCCOLETTI IN SALSA DI PEPERONI/ CANNELLONI STUFFED WITH BROCCOLETTI IN BELL PEPPERS SAUCE

Broccoletto calabrese
Ingr. Per 4 persone.
600 gr. Broccoletti calabresi (lavati e divisi in cimette)
8 fogli di lasagne fresche all'uovo
2 peperoni rossi e gialli
2 uova
250 gr. Caprini (ricotta, feta)
2 spicchi di aglio
60 gr. Reggiano
300 ml besciamella
Burro
100 ml panna da cucina
1 ciuffo prezzemolo
1 piccolo peperoncino
3 cucchiai Olio EVO
Sale.

COME PROCEDERE:
Pronti da gustare
Abbrustolire i peperoni nel forno a 200° finchè la pelle non comincia a bruciacchiarsi. Una volta pronti, lasciateli raffreddare e poi privarli della pelle. Infine metteteli  nel robot da cucina e tritateli insieme all’aglio. Aggiungere la panna, il parmigiano, sale e prezzemolo e frullate ancora sino ad avere un composto omogeneo. Infine unite la besciamella e frullate ancora. Lessate i broccoletti in acqua bollente e salata per circa 10’ (o fin quando i gambi risulteranno teneri). Scolateli e poi fateli saltare per 5-6’  in una padella con 3 cucchiai di olio e uno spicchio di aglio che poi toglierete. Lasciateli intiepidire, frullateli nel mixer e poi mescolateli in una ciotola con i caprini, le uova e 2 cucchiai di parmigiano.  Aggiungete poco sale se occorre.
Dividete i fogli di lasagna a metà e farciteli  con il composto di caprini e broccoletti, poi arrotolate per formare il cannellone. Cospargete il fondo di una pirofila conun velo di salsa ai peperoni.  Adagiatevi  i cannelloni ripieni che coprirete con salsa e con il parmigiano rimasto.
Cuoceteli in forno a 200°, coperti con un foglio di alluminio, per 10’ poi togliete il foglio e lasciate gratinare per altri 10 minuti.

ENGLISH TRANSLATION: 

 CANNELLONI STUFFED WITH BROCCOLETTI IN BELL PEPPERS SAUCE. 
Ingr. For 4 persons

 8 sheets of  eggs lasagne
 2 red and yellow peppers
Ready to be eaten.
2 eggs
250 gr. Cheese  (ricotta, feta)
 2 cloves of garlic
60 gr. Reggiano cheese  
300 ml bechamel sauce
100 ml cream
 1 sprig parsley minced
 1 small chili pepper
 3 tablespoons oil EVO
Salt.

METHOD:
 Toast the peppers in the oven at 200° until the skin begins to burn. Once ready, let them cool and then deprive them of the skin. Put them  in the food processor  and chop together with the garlic. Add the cream, the parmesan cheese, salt and parsley and whisk again until you have an homogeneous mixture.
Finally add the bechamel sauce and whisk it yet. Boil the broccoli in boiling salted water for about 10' (or until the stems will be soft).  Drain and then saute for 5-6 minutes in a frying pan with 3 tablespoons of oil, a clove of garlic (throw away at the end) and hot chili pepper.   Let them cool and then mince into the mixer; put them in a bowl and add ricotta and feta cheese, eggs and 2 tablespoons of parmesan cheese. Add a little salt if necessary. Divide the lasagna sheet in two halves, put over each half some of the broccoli mixture and then roll to make cannellone. Sprinkle the bottom of an oven dish with a  veil of pepper sauce, and over this, lay the cannelloni. Cover them with other pepper sauce and Reggiano cheese remained.
Cook in oven at 200 °, covered with aluminum foil for 10' then remove the sheet and bake au gratin for other 10 minutes.

TORTA DI RECANATI AL FORMAGGIO/RECANATI SALTED CAKE WITH CHEESE

Questa torta salata è tipica di un paesino delle Marche chiamato Recanati (noto per aver dato i natali al famoso poeta Giacomo Leopardi). La ricetta è tenuta ben segreta dai fornai e dai pasticcieri della zona, per cui ho dovuto inventarmela di sana pianta e direi di esserci riuscita bene! Gli abitanti del luogo usano mangiarla durante il periodo pasquale dopo averne cosparso le fette con il saporitissimo "ciauscolo", un salame crudo e morbido anch'esso tipico della zona.
Assaporatela tiepida o fredda insieme a qualche fetta di salame. Sentirete che prelibatezza!

350 gr. di farina
4 uova (tenere da parte le chiare)
Prima della lievitazione
½ bicchiere di olio di oliva
1/2 bicchiere di latte tiepido
2 cubetti e 1/2 di lievito di birra
130 gr. di pecorino romano grattugiato
130 gr. di parmigiano grattugiato
200 gr. di groviera tagliata in cubetti di 1,5 -2 cm di lato
Pepe
2 cucchiaini rasi di sale
Una bella macinata di noce moscata 

Come procedere:
Sciogliete il lievito nel latte tiepido. Aggiungete i tuorli,  l’olio e infine, poca alla volta, la farina. Unite i formaggi, il pepe e la noce moscata  e mischiate bene con un cucchiaio. Se vedete che l’impasto è troppo duro, aggiungete un altro pochino di latte. Infine aggiungere anche le chiare montate a neve.
Imburrate e infarinate uno stampo a pareti alte (io per comodità ho usato lo stampo di carta del panettone), quindi versateci dentro il composto che deve stare almeno 3 cm al di sotto del bordo. Coprite con uno straccio da cucina e mettete a lievitare per una notte intera.
La mattina seguente preriscaldate il forno a 150°; con le dita infilate dentro il composto i pezzetti di groviera (uno alla volta)  mandandoli giù fino alla metà dell’altezza dell'impasto, quindi infornate. Dopo circa venti minuti alzate la temperatura A 180°  e continuate a cuocere per altri 20 minuti. La torta sarà pronta quando infilando uno stuzzicadenti al suo interno, uscirà  bene asciutto.

ENGLISH TRANSLATION: 

 This pie is typical of a village in the Marche (italian region) called Recanati (known for having given birth to the famous poet Giacomo Leopardi).  The recipe is well-kept secret from bakers and pastry chefs in the area, so I had to  invent it  and  I would say  I  succeeded very well! The inhabitants of the place use to eat it during the Easter period after having sprinkled slices with the tastiest 'ciauscolo', a soft and raw salami, typical of the area. 


 RECANATI SALTED CAKE WITH CHEESE
 
350 gr. Flour
 4 eggs (keep the whites)
½ glass of olive oil
1/2 glass of lukewarm milk
2 cubes and 1/2 of yeast
130 gr  romano cheese (grated)
 130g parmesan (grated)
 200 gr. of Gruyere  cheese cut into cubes of 1.5 -2 cm
1 pinch Pepper
2 scant  teaspoons salt
1 sprinkling of nutmeg 

PROCEED AS FOLLOW:
Dissolve the yeast in the lukewarm milk. Add the egg yolks, the oil and the flour (few at a time). Add the grated cheeses, pepper and nutmeg and mix well. If you see that dough is too hard, add another bit of milk. At the end add the whisked egg whites.
Butter and flour a mold with high hedges ( for convenience I have used the paper panettone mould), then put  inside the mixture which must be at least 3 cm below  the board. Cover with a cloth and put to rise for an entire night.
The following morning preheat the oven at  150 ° C; with fingers put inside, one at a time,  the pieces of gruyere, sending them at about the half of the mixture height and then put it into the oven. After about twenty minutes increase  the temperature at 180°C and continue to cook for other 20 minutes (or more if need).
The cake will be ready when by plugging a toothpick inside, will come out well dry.

INVOLTINI DI PROSCIUTTO COTTO IN GELATINA RIPIENI DI INSALATA RUSJELLY COOKED HAM ROULADES FILLED WITH RUSSIAN SALAD SA/


Antipasto rinfrescante
Ingr. Per 4 persone
8 fette di prosciutto cotto
400 gr di insalata russa già pronta.
1 dado di gelatina (o 5 fogli di colla di pesce)
250 ml acqua
250 ml vino bianco a temperatura ambiente
8 cetriolini sott’aceto.
2 cucchiai prezzemolo tritato

COME PROCEDERE:
Riempite le fettine di prosciutto cotto con l’insalata russa (circa due cucchiai pieni per involtino) e poi arrotolatele su se stesse. In una pirofila, adagiate uno accanto all’altro gli involtini farciti cospargendo qua e la con fettine di cetriolini e prezzemolo tritato.
Preparate la gelatina: portate ad ebollizione l’acqua. Togliere dal fuoco e farvi sciogliere il dado di gelatina, poi aggiungervi il vino e mescolate bene lasciando raffreddare la preparazione.
*Nota: se usate la gelatina in fogli dovete prima scioglierla in acqua fredda e poi metterla nel mix tiepido di acqua e vino.
Appena pronta, versatela sugli involtini  e mettete in frigorifero a raffreddare per circa 2 ore. Gli involtini sono pronti da mangiare quando la gelatina si sarà solidificata.

ENGLISH TRANSLATION:

JELLY COOKED HAM ROULADES FILLED WITH RUSSIAN SALAD 
 
Proceeding:
Fill the slices of ham with the russian salad (approximately two tablespoons full for roulade) and then roll on themselves. In a pyrex dish, lay next to one another the  stuffed rolls, sprinkling here and there with slices of gherkins and chopped parsley.
Prepare the gelatine: boil the water. Remove from the heat and dissolve in it the cube of gelatine, then add the wine, mix well and leave to cool the preparation.
* Note: if you use the gelatine sheets you must first liquefy it in cold water, and then put it in the warm  mix of water and wine.
 As soon as ready, pour it on roulades and put in the refrigerator to cool for about 2 hours.
The roulades are ready to eat when the gelatine will be solidified.

CHAMPIGNON RIPIENI/STUFFED CHAMPIGNON MUSHROOMS

Le versatili cappelle di funghi ripiene possono essere utilizzate come antipasto, come primo o secondo piatto. Il successo sarà sempre assicurato!
Cappelle di funghi ripiene: da leccarsi i baffi!
Ingr. per 4 persone
8 grandi champignons – di circa 6 cm di diametro
1 spicchio di aglio schiacciato
1 cucchiaio di olio extravergine di oliva
1 uovo sbattuto
40 gr.  di   pecorino grattugiato
1 cucchiaino di sale
½ cucchiaino di pepe nero
50 gr. pangrattato + 4 pizzichi per la guarnizione finale.
3 cucchiai di prezzemolo tritato
5 cucchiai di olio per ungere la teglia più 2 cucchiai per spennellare  i funghi.

COME PROCEDERE:
Sciacquate i funghi delicatamente sotto un filo di acqua corrente e poi asciugateli con carta da cucina.
Staccate i gambi e mettete da parte.
Con un cucchiaino scavate internamente (ma non troppo) le cappelle per fare spazio alla farcitura. Mettete la polpa ricavata nel mixer insieme ai gambi e tritate bene, trasferitela poi in una ciotola e aggiungete tutti gli altri ingredienti. Mescolate bene con un cucchiaio per ottenere un ripieno che non sia né troppo duro, né troppo soffice.  Riempite le cappelle con il composto, appiattendolo bene con le dita per farlo aderire bene alle pareti interne. Non riempite troppo le cappelle perché durante la cottura il ripieno si gonfia un pochino. Mettete i funghi ripieni in un tegame da forno unto di olio. Cospargeteli con poco olio e spolverateli con poco pangrattato. Mettete in forno a 180° per circa mezzora. Lasciate intiepidire 5 minuti prima di servire.

The versatile chapels of stuffed mushrooms may be used as a starter, a first or second dish. Success will be always assured!

STUFFED CHAMPIGNON MUSHROOMS
 
 8 big   champignon mushrooms - of about 6 cm diameter
 1 clove   garlic - mushed
 1 tbs   oil - EVOO
 1   egg - beated
 50 gr. pecorino Romano – cheese  (grated)
 1 tsp   salt
 1/2 tsp   black pepper
50 gr   breadcrumbs
3 Tbsp    Parsley - chopped

METHOD:
Rinse mushrooms under little current water and then dry with a kitchen towel.
 Remove mushroom stalk and set aside; with a teaspon excavate the mushroom internally in
order to make sufficient space for filling. Chop stalks and pulp  in a food
processor then  put the mixture in  bowl. Add all the other ingredients of
the recipe and mix with a spoon (the mixture must be neither soft, neither
very hard). Fill the caps with the mixture:  flattening it with your fingers
against the inner surface of the caps. Don't fill too much caps because the
filling puf a little during cooking. Put the caps  in an oiled  baking pan.
Sprinkle the caps with  few other oil and few other breadcrumbs. Put in hot
oven (200°C) for about 30 minutes. Let them cool 5 minutes before serving.
