PATATE DUCHESSA AL FORMAGGIO/DUCHESS POTATOES WITH CHEESE


Patate duchessa appena sfornate
Ingr. Per 4 persone
500 gr patate
50 gr parmigiano grattugiato
50 gr burro ( a temperatura ambiente)
1 uovo intero e un tuorlo
1 pizzico di noce moscata
Pepe bianco macinato fresco
Sale
COME PROCEDERE:
Lessatele in acqua salata fino a che risulteranno tenere, poi scolatele, sbucciatele e passatele allo schiacciapatate raccogliendo il passato in una terrina. Unite le uova, il burro (tagliato in pezzetti) e la noce moscata, pepe, poco sale e il parmigiano grattugiato. Impastate molto bene con un cucchiaio di legno e poi mettete il composto in una sac a poche. Foderate una teglia con carta da forno. Con la siringa a punta dentellata andate a formare dei mucchietti  tondi di circa 5 cm di diametro ben distanziati tra di loro. Infornate a 180°C per 10 minuti o fin quando vedrete che la superficie sarà gratinata al punto giusto.

ENGLISH TRANSLATION:
DUCHESS POTATOES WITH CHEESE
Ingr. For 4 people:
500 gr potatoes 
50 gr grated Reggiano cheese
50 gr butter ( at room temperature) 
1 whole egg and 1 yolk 
1 pinch of nutmeg 
1 fresh ground white pepper.

METHOD:
Boil potatoes in salted water until they are tender, then peel and mash in the proper tool assembling the puree in a bowl. Add eggs, butter (cut in little pieces) and nutmeg, pepper, a little salt and the grated parmesan. Knead very well with a wooden spoon and then put the compound in a sac a poche. Cover a baking pan with baking paper. Using the starring edge of the sac a poche, make some little circular heaps about 5 cm diameter and well apart from each other. Bake in preheated oven at 180°C for about 10 minutes or until surface will be golden brown.

CAPONATA DI MELANZANE/EGGPLANT CAPONATA

Un delizioso contorno della tradizione siciliana.
Ingr. Per 4 persone.
700 gr. melanzane
50 gr olive verdi denocciolate
1 cucchiaio capperi sott’aceto
1 cucchiaio abbondante di pinoli
200 gr. pomodori  tondi spellati e tagliati a cubetti
1 cucchiaio uvetta sultanina (fatta rinvenire in acqua tiepida)
1 cucchiaio di zucchero
¼ bicchiere di aceto bianco
1 cipolla affettata
5 coste bianche di sedano
Olio per friggere
Sale
Pepe

COME PROCEDERE:
Lavate e asciugate le melanzane, poi tagliatele  a tocchetti. Mettetele in un colapasta coperte di sale con un peso sopra e lasciatele spurgare per un paio di ore. Risciacquatele sotto l’acqua corrente, asciugatele e poi friggetele in abbondante olio bollente. Appena sono pronte mettetele a scolare su carta assorbente.
Tagliate il sedano in pezzetti lunghi circa 3 cm e poi fateli friggere nello stesso olio delle melanzane. Quando sarà dorato, scolatelo su carta assorbente ed unitelo alle melanzane. Togliete dalla padella quasi tutto l’olio usato e nel poco rimasto rosolate la cipolla; appena sarà dorata unite i pomodori e dopo 10 minuti aggiungete lo zucchero, l’aceto e le olive, i capperi, i pinoli, l’uvetta strizzata, le melanzane e il sedano. Condite il tutto con sale e pepe e mescolate bene. Lasciate cuocere a fuoco basso per circa 15 minuti, mescolando spesso. Trasferita la caponata in un piatto da portata e servite quando è completamente raffreddata.
ENGLISH TRANSLATION: 
EGGPLANT CAPONATA
Ingr. For 4 people:
700 gr eggplants
50 gr green olives (stoned) 
1 tablespoon pickled capers 
1 generous tablespoon of pine nuts 
200 gr. round tomatoes peeled and cubed 
1 tablespoon raisins (softened in warm water) 
1 tablespoon sugar 
¼ cup of white vinegar 
1 sliced onion 
5 White coasts of celery 
Oil for frying 
Salt 
Pepper

METHOD:
Wash and dry the eggplant, then cut them into chunks. Put them in a colander covered with a pinch of  salt and with a weight on top;  let them bleed for a couple of hours. Rinse them under running water, dry and then fry them in abundant hot oil. As soon as they are ready put them to drain on absorbent paper.
Cut the celery into pieces about 3 cm long and then fry in the same oil of eggplants. When golden brown, drain it on absorbent paper and mix it with eggplant.
Remove from the pan almost all the oil used;  in the little oil remained brown the onion; just has browned add the tomatoes and after 10 minutes add the sugar, vinegar, the olives, capers, pine nuts, raisins (previously squeezed) , aubergines and celery. Season with salt and pepper and mix well.
Cook over low heat for about 15 minutes, stirring frequently. Transfer the caponata into a serving dish and serve when completely cool.

UOVA ATTRIPPATE/EGGS LIKE TRIPE


Un piatto della tradizione romana, purtroppo non molto conosciuto. Le Uova Attrippate vengono chiamate così perchè le strisce di frittata, una volta condite con la salsa di pomodoro, ricordano vagamente la Trippa. Quella che vi presento è una ricetta di famiglia, semplice e gustosa, ideale per una cenetta informale tra amici. Un piatto da servire caldo, tiepido o freddo.


*Nota: per preparare le frittatine (2 uova alla volta) usate un piccolo padellino di 20 cm perchè sono più buone se hanno un pò di spessore.


Una frittatina  tagliata a strisc
Ingr. Per 2 persone
4 uova
1 tazza di piselli surgelati
1 cipolla
200 gr passata di pomodoro
1/2 tazza  di brodo vegetale 
per cuocere i piselli.
Olio
Sale
Pepe
2 cucchiai di Pecorino grattugiato
2 rametti menta tritata

COME PROCEDERE:
Preparate un sughetto soffriggendo 1/2 cipolla in 2 cucchiai di olio e aggiungendo poi la passata di pomodoro e qualche foglia di menta. Salate, pepate e cuocete per  7-8 minuti.
Preparate un brodino vegetale con mezzo dado.
In un pentolino preparate un soffritto con la cipolla rimasta, aggiungete i piselli e il brodo (poco alla volta); pepate e lasciate cuocere per circa 15 minuti o fin quando risulteranno teneri.
Sbattete le uova con un pizzico di sale. Cuocetele 2 per volta in un padellino unto di olio finché otterrete una frittata dorata da ambedue i lati.
Trasferite le due frittate in un piatto ovale e tagliatele a strisce lunghe 7 cm e larghe due. Conditele con il sughetto preparato, una macinata di pepe,  il pecorino e la mentuccia tritata. Mescolate bene e guarnite il piatto disponendo i piselli intorno alle uova. mettete al centro delle foglie di menta fresca.
ENGLISH TRANSLATION: 

EGGS LIKE TRIPE
A dish of the Roman tradition,  unfortunately,  not very well known. "Eggs Attrippate" are  so called  because the strips of frittata, once seasoned with tomato sauce, are vaguely resembling the tripe. What I am presenting to you is a family recipe, simple, tasty, ideal for a casual dinner with friends. A dish to serve hot, warm or cold.

 * Note: to prepare frittatas(2 eggs at a time, ) use a 20 cm skillet because they are better if they have a certain thickness.
Ingr. For 2 people: 
4 eggs 
200 gr frozen peas 
1 onion 
200 gr tomato sauce
1/2 cup vegetable broth to cook the peas. 
Oil 
Salt 
Pepper 
2 tablespoons of grated Pecorino cheese 
2 sprigs  mint (chopped)

HOW TO PROCEED: Prepare a sauce sauteing 1/2 onion in 2 tablespoons of oil and then adding the tomato sauce and a few mint leaves. Add a pinch of salt and pepper and cook for 7-8 minutes. 
Prepare the vegetable broth.
In a small saucepan fry the half onion  remained, add the peas, broth (a little at a time),  pepper and cook for about 15 minutes or until they will become soft. Beat the eggs with a pinch of salt. Fry them 2 at a time into a little frying pan slightly oiled; cook  until you will get a golden omelet on both sides. Transfer the two omelets in an oval dish and slice them  into strips 7 cm long  and two cm wide. Drizzle with the sauce prepared, a pinch of pepper, the pecorino cheese and the chopped mint. Stir well and garnish the dish by arranging the peas around the eggs. Put in the center some fresh mint leaves.

FARFALLE CON TONNO, PISELLI E MOZZARELLA/BUTTERFLIES WITH TUNA, PEAS AND MOZZARELLA


Piatto semplice e veloce
Ingr. Per 4 persone
400 gr farfalle
400 gr polpa di pomodoro
200 gr tonno sottolio
200 gr piselli surgelati o freschi
200 gr mozzarella
1 mazzetto basilico
1 cipolla tagliata a cubetti.
Olio
Brodo vegetale per i piselli
Sale
Pepe
COME PROCEDERE:
Prendete metà della cipolla e fatela soffriggere in due cucchiai di olio. Aggiungete i piselli, bagnate con un po’ di brodo, pepate e lasciate cuocere per 15 minuti a fuoco moderato finché non risultano cotti.
In una grande padella fate soffriggere la cipolla rimanente, unite la polpa di pomodoro, salate e pepate. Fate cuocere per 15 minuti e poi aggiungere il tonno a pezzettini, il basilico tritato e  i piselli. Lasciate insaporire il tutto per altri 5 minuti.
Cuocete le farfalle in acqua salata. Scolatele e poi ripassatele nella padella con la salsa. Unite la mozzarella a cubetti, mescolate bene e servite nei piatti. Piatto veloce e saporito. 
ENGLISH TRANSLATION: 

BUTTERFLIES WITH TUNA, PEAS AND MOZZARELLA

Ingr. For 4 people
400 gr butterflies pasta
400 gr tomato pulp
200 gr tuna fish in oil
200 gr peas  (frozen or fresh)
200 gr mozzarella cheese
1 bunch basil
1 onion diced.
Oil
Vegetable broth for peas
salt
pepper
HOW TO PROCEED:
Take half of the onion and fry it in a pan with  two tablespoons of oil.
Add peas, wet with a little broth, pepper and cook for 15 minutes over a moderate heat until they are cooked. In a large pan fry the remaining onion, add the tomato sauce, salt, and pepper. Cook for 15 minutes and then add tuna into little pieces, chopped basil and peas. Cook for a further 5 minutes. Cook pasta in salted water. Rinse and then sauté  into the pan with sauce. Add  mozzarella into small cubes, mix well and serve in dishes.  Fast and tasty.

LINGUINE ALLO SCOGLIO/LINGUINI ON THE ROCK


Ingr. Per 4 persone.
250 gr. code di gambero
150 gr. gamberetti
200 gr. seppioline
200 gr calamari
300 gr di cozze
200 gr vongole
400 gr linguine
350 gr pomodori da sugo spellati e  tagliati a pezzetti (oppure pomodorini ciliegia tagliati a quarti)
2 mazzetti  prezzemolo tritato.
4 spicchi di aglio 1peperoncino                                                                                                                                       
1 bicchiere di vino bianco secco
olio
sale
fette di limone per la decorazione (facoltativo).

COME PROCEDERE:
Pulire le cozze e le vongole. Metterle in due tegami con poco olio, 1 spicchio di aglio e peperoncino. Alzate la fiamma e fate insaporire . Bagnate con mezzo bicchiere di vino bianco e lasciate cuocere a tegame coperto  fino a che si aprano. Quando si sono intiepidite, sgusciare solo le vongole.
Pulite i calamari (togliendo la penna all’interno) e riduceteli a fettine (tagliando a metà anche i tentacoli).
Pulite anche le seppie e tagliatele a fettine (lasciando interi i tentacoli). Fate insaporire le seppie e i calamari in una padella con 4 cucchiai di olio, 1 spicchio di aglio e metà del prezzemolo tritato. Sfumate con il vino e lasciate cuocere per una decina di minuti.
Pulite le code di gambero togliendo l'intestino, poi mettetetele a rosolare  in padella con poco olio per 5 minuti. Tenete al caldo.
Lessate i gamberetti  in poca acqua acidulata per 5 minuti. Scolarli, sgusciarli e togliete il filetto nero (cioè l’intestino); teneteli da parte.
Mettete a lessare la pasta in una pentola con abbondante acqua salata. Nel frattempo, prendete una padella abbastanza capiente da poter contenere poi tutta la pasta e tutto il pesce. Fate soffriggere 1 spicchio di aglio tagliato a pezzettini, aggiungere il pomodoro, unirvi i calamari e le seppie con il loro liquido, lasciate cuocere per  10 minuti;  unite  i gamberetti e poi anche le cozze e le vongole (precedentemente sgusciate) con tutto il loro liquido di cottura (precedentemente filtrato) e lasciate cuocere per altri 5 minuti; verso la fine unite anche gli scampi . Regolate di sale.
Scolate la pasta molto al dente e finitela di cuocere nel sughetto preparato. Cospargete con  il prezzemolo tritato rimanente e servite subito in tavola. Decorate con fette di limone.
ENGLISH TRANSLATION:

LINGUINI ON THE ROCK
Ingr.  For  4 people
250 gr. Prawn tails
150 gr. Shrimps
200 gr. Cuttlefish
200 gr squid
300 gr mussels
200 gr clams
400 gr linguine
350 gr round tomatoes peeled and cut into small pieces (or cherry tomatoes cut in quarters)
2 bunches parsley- minced
4 garlic cloves
 1chili
1 glass of white wine – dry  
Oil
½ TBSP white vinegar  (or lemon) for shrimps.
Salt
Slices  of lemon for decoration (optional).
METHOD:
Clean  mussels and clams. Put them in two pans with 2 TBSP of  olive oil, 1 clove of garlic and chili. Raise the flame and let them season . Wet with half a glass of white wine and let it cook in covered saucepan until open. When they are cool, shell only clams.
Clean squids (by removing the pen inside) and dice them into slices (cut in half even the tentacles). Clean the cuttlefish and cut into slices (let tentacles whole). Saute  them  in a frying pan with 4 tablespoons of oil, 1 clove of garlic and parsley. Spread  with ½ glass of wine and cook for abou t ten minutes.
Clean the prawn  tails by removing the intestines and let them brown in a pan with a little oil for 5 minutes. Keep in a warm place.
Boil shrimps in acidulated water for 5 minutes. Drain, peel them and remove the black  intestine; set aside.
Put to boil the pasta in a pot with salted water. In the meantime, take a frying pan large enough to contain pasta and fish. Fry 1 clove garlic cut into little pieces, add the tomato, join the squid and cuttlefish with their liquid, let cook for 10 minutes; joined shrimps and then  mussels and shelled clams with all their cooking liquid (previously filtered) and cook for other 5 minutes; toward the end,  join also the shrimps . Season with little  salt if necessary.
 Drain pasta very “al dente” and finish its cooking in the pan with sauce. Sprinkle with chopped parsley and serve immediately on the table. Decorate with lemon slices.

SALSA DI OLIVE PANDORA/OLIVES SAUCE

Gustosa per le tartine o per condire la past
300 gr olive dolci nere
200 gr. olive greche
100 gr olive di Gaeta
100 gr. olive verdi dolci
2 spicchi d’aglio schiacciati
4 acciughe tritate
2 cucchiaini capperi (sott’aceto o sotto sale - se sotto sale sciacquateli)
2 cucchiai prezzemolo tritato
120 ml olio Extra Vergine di Oliva

COME PROCEDERE:
1) Snocciolate tutte le olive e mettetele in una ciotola.
2) Schiacciate l’aglio e poi mettetelo nella ciotola insieme alle olive
3) Tritate I capperi, il prezzemolo e le acciughe
Mettete tutto in un robot da cucina e tritate aggiungendo l’olio poco alla volta. In 3-4 minuti avrete ottenuto una salsa liscia e densa. Conservatela nel frigorifero in vasetti di vetro e coperta con un filo d’olio. Si manterrà anche per un mese. Utilizzatela per le vostre preparazioni: tartine, pasta etc…

ENGLISH TRANSLATION: 
OLIVES SAUCE
300 Gr  black olives (sweet) 
200 gr Greek olives 
100 gr Gaeta olives 
100 gr. green olives sweet 
2 cloves of garlic 
4 chopped anchovies
2 teaspoons capers (pickled or salted - if salted, whash them) 
2 tablespoons chopped parsley 
120ml Extra Virgin Olive oil 

METHOD: 
1) Stone all the olives and place in a bowl.
2) Crush garlic and then put it in the bowl with the olives 
3) Chop capers, parsley and anchovies, then put it all in a food processor and chop by adding the oil a little at a time. In 3-4 minutes you have a smooth sauce. Keep it in glass jars (in the fridge) covered with a drizzle of oil. It will preserve at least for a month. Use it for your preparations: canapés, pasta etc.

NASTRI AL FORMAGGIO/CHEESE STRAWS

Per accompagnare il vostro aperitivo
Ingr.  per 4 persone:
1 panetto di pasta sfoglia confezionato (300 gr. circa)
1 uovo +1 cucchiaio di acqua
200 gr Parmigiano reggiano
2 cucchiai paprika dolce
1 cucchiaino pepe nero

COME PROCEDERE:
Con un mattarello stendere la pasta sfoglia in un rettangolo spesso circa un centimetro. Spennellate il rettangolo con l’uovo battuto mischiato all’acqua, dopo di che cospargetelo con il mix di formaggio e spezie. Passateci sopra il mattarello in modo che la copertura aderisca bene all’impasto. Fate la stessa cosa anche sull’altro lato. Tagliate poi l’impasto in strisce che torcerete su se stesse per andare a formare i nastri. Metteteli in una teglia coperta con carta da forno.
Mettete in forno  preriscaldato a 220°C per i primi 10 minuti, girandoli se necessario, poi abbassate la temperatura a 170°C e cuocete per altri 5 minuti o fino a che diventano di colore dorato.
*Nota: Quando li cuocete dovete fare attenzione e girarli perché le spezie e il formaggio bruciano facilmente

ENGLISH TRANSLATION:

CHEESE STRAWS
Ingr. for 4 persons: 
1 packet of puff pastry (300 gr about) 
1 egg plus  1 tablespoon water 
200 gr Reggiano cheese 
2 tablespoons sweet paprika 
1 teaspoon black pepper

HOW TO PROCEED: With a rolling pin roll out the puff pastry into a rectangle about 1 centimetre thick. Brush the rectangle with half of  the beaten egg mixed with water. Then sprinkle it with the mix of cheese and spices. Roll out over the mixture with the rolling pin so that coverage stick well to the dough. Do the same thing on the other side. Then cut the dough into strips that you will twist on themselves with your fingers to form the straws.Put them on a baking pan covered with oven paper.
Bake in preheated oven at 220 °C for the first 10 minutes, turning upside down if necessary, then lower the temperature to 170 °C and bake for another 5 minutes or until they become golden brown. * Note: When you cook you have to be careful and turn them upside down because the spices and cheese burn easily.
