DANUBIO SALATO/SALTED DANUBE


Danubio salato con ripieno di cipolle di tropea e gorgonzola
 *Nota: il Danubio può essere fatto anche dolce aggiungendo un po’ più di zucchero all’impasto e riempiendolo con crema al cioccolato (anche nutella), oppure ricotta e gocce di cioccolato, etc.Personalmente, lo preferisco salato. In questo caso , per quanto riguarda il ripieno, potete sbizzarrirvi con tutto ciò che vi piace: gorgonzola e salsiccia; marmellata di cipolle di tropea e gorgonzola; peperoni  e fontina; carciofi e pancetta etc…

Danubio con ripieno di prosciutto, funghi e toma
DANUBIO SALATO
Ingr.  per 4 persone (16-18 pallette circa)
500 gr di farina manitoba
1 uovo + 4 tuorli
150 gr. burro a temperatura ambiente
100 ml latte tiepido
1 bustina lievito di birra  liofilizzato
25 gr zucchero
un pizzico di sale
PER RIEMPIRE:
80 gr toma (oppure fontina)
150 gr di prosciutto cotto tritato
½ bustina funghi secchi
COME PROCEDERE:
*Per questa ricetta vi occorre una tortiera da 28 cm di diametro.
Su una spianatoia mettere la farina a fontana setacciata insieme al sale. Al centro sgusciate le uova e sbatterle con una forchetta. Aggiungere il lievito e lo zucchero. Unite il latte poco a poco e cominciate ad impastare, (se vedete che l’impasto risulta troppo duro aggiungerne altro). Lavorate per almeno 10 minuti.
Fate quindi lievitare in ambiente caldo, fino a che non raddoppia di volume (circa 2 ore).
Nel frattempo preparate il ripieno: tagliate la fontina in 18 cubetti e tritate il prosciutto cotto. Ammollate i funghi in acqua tiepida e tagliateli in altrettanti pezzetti.
Quando la pasta sarà pronta, lavorarla ancora un po’ e poi dividetela in 18 pezzi di uguale peso.
Stendete ogni pezzetto  per ottenere dei dischi di circa 13 cm di diametro e adagiarvi al centro il ripieno. Formate delle pallette sigillando bene sulla base (cioè quella che andrà sul fondo della tortiera).
Disporre le palline ottenute in una tortiera foderata con carta da forno. Lasciatele lievitare ancora un’ora per fare in modo che si attacchino l’una con l’altra. Spennellate con un uovo sbattuto e infornate a 180° per circa 20-25 minuti.
ENGLISH TRANSLATION:
 * Note: Danube can be also done sweet by adding a little more sugar to the dough and filling it with chocolate custard (also nutella), or ricotta cheese and chocolate drops, etc. Personally, I prefer it salty.
In this case, as regards the stuffing, you can please yourselves with everything you like: gorgonzola and sausage; jam of Tropea onions and gorgonzola cheese; peppers and fontina cheese; artichokes and bacon etc…

SALTED DANUBE

Ingr. for 4 people (about 16-18 balls) 
500 gr manitoba  flour (strong flour)
1 egg + 4 egg yolks 
150 gr. butter at room temperature
100 ml lukewarm milk
7 gr. yeast lyophilized (or 25 gr. fresh)
25 gr sugar
1 pinch of salt
FOR STUFFING:
80 gr fontina cheese
150 gr  cooked ham, chopped
½ sachet dried mushrooms
METHOD:
*For this recipe you need a cake stamp  28 cm. diameter.
On a pastry board put the flour sifted together with the salt. Shell the eggs in the center and whisk them with a fork. Add the yeast and sugar. Add the milk little by little and start to knead, (if you see that the dough is too hard add more milk).  Work for at least 10 minutes. Then let it rise in a warm area until doubled in volume (about 2 hours).  In the meantime, prepare the filling: cut the fontina cheese in 18 cubes and chop the cooked ham. Soak the mushrooms in warm water and chop them into pieces.
When the pasta is ready, knead again a little and then divide it into 18 pieces of equal weight.
Roll out each piece to get  disks of about 13 cm diameter, then lay at the center the filling. Form little balls  sealing them  well on the basis (I mean,  that which will be on the bottom of the cake pan).
Arrange the balls into a cake mold wrapped with cooking paper. Let them rise again  for an hour or till they stick together with one another. Brush with a beaten egg and bake at 180° for about 20-25 minutes.

PANNA COTTA CON CARAMELLO AL CAFFE’/COOKED CREAM WITH COFFEE CARAMEL


Ingr per 6 persone
500 ml panna fresca
100 gr. zucchero
100 ml latte
10 fogli di colla di pesce
1 stecca di vaniglia
Per il Caramello al Caffè:
140 gr. zucchero
40 ml di caffè espresso molto forte
Zucchero a velo per la guarnizione.

COME PROCEDERE:
Mettere a bagno i fogli di colla di pesce nell'acqua fredda. In un pentolino antiaderente fate scaldare il latte senza farlo bollire. Appena caldo, toglietelo dal fuoco e aggiungetevi i fogli di colla di pesce strizzati bene.
In un altro pentolino versate la panna con lo zucchero e la stecca di vaniglia; mettete sul fuoco e portate a bollore, quindi togliete subito dal fuoco e versatevi il latte con la gelatina. Mescolate bene e togliete la stecca di vaniglia. Riempite degli  stampini in silicone (oppure uno stampo singolo in ceramica precedentemente bagnato con acqua fredda) e mettete a raffreddare in frigo per almeno ½ giornata o fino a quando la panna cotta si sarà indurita. Una volta pronta, capovolgete gli stampini sui piattini da dessert e guarniteli con il caramello al caffè e poco zucchero a velo.
Preparare il Caramello:
In un pentolino antiaderente mettete un velo di zucchero su fuoco medio, lasciate che si sciolga completamente (senza mescolare) e poi aggiungerne un altro cucchiaio. Dopo che anche questo si sarà sciolto potete iniziare a mescolare con un cucchiaio di legno. Proseguite così fino a che tutto lo zucchero sarà esaurito. Dopo che tutto lo zucchero sarà sciolto, spegnere il fuoco ed unire il caffè bollente facendo attenzione a non ustionarvi. Mescolate bene e versate sulla panna cotta guarnendo anche con poco zucchero a velo.
ENGLISH TRANSLATION:

COOKED CREAM WITH COFFEE CARAMEL
Ingr. for 6 people
500 ml fresh cream
100g sugar
100 ml milk
10 sheets of fish glue (gelatine)
1 stick of vanilla 
For the coffee caramel:
140 grams sugar
40 ml espresso coffee very strong
confectioners' sugar for garnishing. 
METHOD:
Soak the gelatin sheets in cold water. In a non-stick saucepan heat the milk without boiling it. As soon as hot, remove from heat and add the gelatin sheets well squeezed. In another small saucepan pour in the cream with the sugar and the vanilla stick; put on the fire and bring to boil, then remove immediately from the heat and pour the milk with the gelatin. Mix well and remove the vanilla stick.
Fill the silicon molds (or a single mold in ceramic previously wet with cold water) and put to cool in the fridge for at least 5 hours or until cooked cream will be hard. Once ready, turn the muffin cups on  dessert dishes and garnish with the caramel coffee and a little powdered sugar.   
Make the Caramel:
In a non-stick saucepan put a little bit of sugar (1 Tbsp) on medium heat, let it dissolve completely (without stirring) and then add another tablespoon. After that even this second Tbsp is melted you can start to mix with a wooden spoon. Continue this way until all the sugar will be exhausted.
After all the sugar is dissolved, turn off the heat and stir in the boiling coffee taking care don't burn yourselves. Mix well and pour on the cooked cream; garnish with a little confectioners' sugar.

BRUSCHETTA DI PANE CARASAU/CARASAU BREAD BRUSCHETTA


Il Pane Carasau è il tipico pane "sfogliato" della tradizione sarda, meglio conosciuto con il nome di "Carta musica" perchè la sua spiccata croccantezza ne rende rumorosa la masticazione...
Ingr. per 4 persone:
- 4 fogli di pane carasau
- 500 gr pomodori ciliegia a pezzetti
- Olio extra vergine di oliva
- Sale
- Aglio tritato (facoltativo)
- Basilico tritato (oppure origano).

COME PROCEDERE:
In un grande piatto da portata adagiare qualche pezzo di pane carasau. Coprirlo con pezzetti di pomodoro, olio, sale, aglio e basilico. Coprite con un altro strato di pane carasau e procedete come sopra fino ad esaurimento degli ingredienti. Terminate con lo strato di pomodori. Servite al momento perchè l'acqua contenuta nel pomodoro può compromettere la croccantezza del pane carasau.

CARASAU BREAD BRUSCHETTA
Ingredients for 4 people:
- 4 Sheets of "Carasau bread"
- 500 gr. cherries tomatoes cut in little pieces.
- Extra Virgin Olive Oil
- Salt
- Garlic minced (optional)
- Basil (minced)  or oregano.

METHOD:
In a large dish put some pieces of "Carasau". Then put  one  layer of
tomatoes (cutted in little pieces),oil, salt and basil. Cover with another
stratum of  Carasau pieces. Proceed untill the end of ingredients and finish with the tomatoes layer.
Serve at the moment this dish because the water contained in the tomatoes
could soften the crispness of the bread.

SPAGHETTI CON IL POLPO/ SPAGHETTI WITH OCTOPUS



Ingr. Per 4-5 persone.
1 polpo di circa 700 gr.
750 ml passato di pomodoro
2 spicchi di aglio
1 peperoncino
½ tazza prezzemolo tritato
½ bicchiere di vino bianco secco
6 cucchiai di Olio
Sale
1 macinata di pepe
500 gr spaghetti

COME PROCEDERE:
Pulite il polpo eliminando la sacca che si trova nella testa e gli occhi, tagliatelo quindi a pezzetti. In una padella antiaderente abbastanza capace, mettete a soffriggere nell'olio, l’aglio tagliato a fettine , appena si sarà un po’ colorito (non bruciatelo, mi raccomando) versate il polpo tagliato a pezzi non troppo grandi, sfumate con il vino e lasciate evaporare. Aggiungete la passata di pomodoro, metà del prezzemolo, il peperoncino e una macinata di pepe. Aggiungere anche ½ bicchiere di acqua. Coprite e lasciate cuocere a fuoco moderato per circa 30-40 minuti. Se vedete che si asciuga troppo, aggiungete altra acqua. Salate solo 10 minuti prima della fine cottura a vostro piacimento.
Intanto mettete a cuocere gli spaghetti in abbondante acqua salata. Scolateli al dente e trasferiteli nella padella con il sugo;  spolverate con il rimanente prezzemolo tritato e buon appetito!
ENGLISH TRANSLATION:
Ingr. For 4-5 people:
1 Octopus of approximately 700 gr.

½ cup chopped parsley
½ cup of dry white wine
6 tablespoons of oil
1 pich salt
1 fresh ground pepper
500 gr spaghetti

METHOD:
Clean octopus by eliminating the bag, which is located in the head and eyes,
Then cut it into pieces. In a non-stick skillet fairly capable, put to fry in the oil, the sliced garlic,  as soon as it will be a little colorful (don't burn it, I recommend ) add the octopus, sprinkle with wine and allow to evaporate.
Add the tomato sauce, half of the parsley, the hot chili pepper and a pinch of pepper. Also add ½ cup of water. Cover and let simmer for about 30-40 minutes. If you see that it dries too much, add more water. Salt only 10 minutes before the end of cooking at your leisure.In the  meanwhile cook spaghetti in boiling salted water. Drain "al dente"season them in the skimmer with sauce; sprinkle with the remaining chopped parsley and good appetite!

SUPPLI’ AL TELEFONO/SUPPLI' ON THE PHONE

Si chiamano "al telefono" perchè la mozzarella calda forma un filo...
 Ingr.  per  9 supplì da 70-80 gr l’uno
200 gr riso arborio
180 gr passata di pomodoro
1 cucchiaio di conserva
20  gr funghi secchi tritati  (facoltativo)
½ cipolla tritata
1/2 peperoncino (facoltativo)
1 pizzico di sale
2 cucchiai di olio
400 ml circa di brodo di carne
50 gr pecorino grattugiato
1 macinata noce moscata
1 uovo piccolo
1 macinata pepe nero
2 cucchiai prezzemolo tritato
80 gr mozzarella
Pangrattato
Olio per friggere
A Roma si usano mangiare come antipasto prima della pizza

COME PROCEDERE:
Preparate il brodo e fate ammorbidire i funghi in poca acqua tiepida per 10 minuti. Strizzarli e tagliateli a pezzettini.
Tagliate la mozzarella a bastoncini di 1 cm di spessore e lunghi circa 4 cm.
Il risotto freddo, i bastoncini di mozzarella e il pangrattato
In una casseruola fate soffriggere la cipolla e appena dorata aggiungervi il passato di pomodoro, la conserva, i funghi , un pizzico di sale, il peperoncino e una macinata di pepe.  Aggiungete il riso e mescolate bene aggiungendo poco brodo alla volta come se steste facendo un risotto. Portate a cottura (molto al dente, mi raccomando) e lasciate raffreddare completamente.  Trasferitelo poi  in una terrina e aggiungete: il pecorino, la noce moscata, il prezzemolo e l’uovo sbattuto. Mescolate bene e poi cominciate a confezionare i supplì. Prendete il riso a cucchiaiate e mettetelo sulla mano sinistra. Con la mano destra formate un incavo al centro del quale vi porrete un pezzetto di mozzarella. Avvolgete il riso tutto intorno alla mozzarella e poi passate il supplì nel pangrattato. Friggete i supplì  in abbondante olio bollente e quando saranno di colore marroncino scolateli su carta assorbente.
ENGLISH TRANSLATION:
Ingr. for 9 supplì 70-80 gr. each

Fate un incavo e metteteci dentro un pezzo di mozzarella...

breadcrumbs

METHOD:
I supplì prima di essere fritti.
Prepare the broth and let soften dried mushrooms in a little lukewarm water for 10 minutes. Squeeze them and chop into little pieces. Cut mozzarella in sticks 1 cm. thick and about 4 cm. long. Saute the onion and when it become golden add the tomato sauce, tomato paste, mushrooms, a pinch of salt, pepper and chili. Add the rice and mix well by adding a little broth at a time as if you were making a risotto.
Bring to cooking (very al dente, I recommend it) and let it cool down completely. Then transfer it into a bowl and add: pecorino,nutmeg, parsley and the beaten egg. Mix well and then start to make  croquettes. Take a spoonfuls of rice and put it on the left hand.
With the right hand forme an hollow in the middle where you will lay a piece of mozzarella cheese. Wrap the rice around the mozzarella and then pass the croquettes in the breadcrumbs. Fry supplì in abundant hot oil, and when they will be brownish color drain them on absorbent paper.

TORTA CAPRESE/CAPRESE CAKE

La torta al cioccolato più buona che io abbia mai mangiato

Ingr. per uno stampo da 24 cm
300 gr. nocciole
170 gr burro a temperatura ambiente
170 gr di zucchero
200 gr cioccolato fondente
4 uova
Zucchero a velo
1 cucchiaio di burro (per lo stampo)
4 cucchiai di pangrattato (per lo stampo)
COME PROCEDERE:
Far tostare le nocciole in una padella antiaderente, quando comincerete a sentire il profumo sono pronte; lasciatele raffreddare e tritatele nel mixer con 100 gr di zucchero.
Tritare il cioccolato fondente e fatelo fondere a bagnomaria.
Separate i tuorli dagli albumi. In una ciotola lavorate il burro con lo zucchero rimasto; mescolate bene con un cucchiaio di legno fino ad ottenere un composto spumoso. Aggiungete uno alla volta i tuorli d’uovo, le nocciole tritate con lo zucchero e mescolate ancora. Infine aggiungete il cioccolato fuso e mischiate accuratamente finché tutti gli ingredienti saranno ben amalgamati. Infine incorporate delicatamente gli albumi montati a neve.
Imburrate una tortiera di 24 cm di diametro e poi cospargetela con pangrattato (eliminando l’eccesso). Versatevi il composto e fate cuocere in forno preriscaldato a 160°C per 40 minuti. Appena è fredda, sformatela su un piatto da portata e decorate con zucchero a velo.
ENGLISH TRANSLATION: 
CAPRESE CAKE
Ingr. for  a mold of 24 cm diameter 
300 gr hazelnuts 
170 gr butter at room temperature 
170 grams of sugar 
200 gr dark chocolate 
4 eggs 
icing sugar 
1 Tbsp butter (for the mold) 
4 tablespoons of bread crumbs (for the mold) 
HOW TO PROCEEED: 
Toast hazelnuts in a non-stick pan, when you will begin to feel the parfume, they are ready; let them cool and chop into the mixer with 100 grams of sugar. Chop the chocolate and let it melt in bain-marie.  Separate the yolks from the whites. In a bowl work the butter with the remaining sugar; mix well with a wooden spoon until fluffy. Add one at a time the egg yolks, the chopped nuts and sugar and mix again. Finally add the melted chocolate and mixed thoroughly until all the ingredients are well blended.
Finally incorporated gently whipped egg whites. Grease the 24 cm cake pan and then sprinkle it  with bread crumbs (eliminating the excess).  Pour the compound and cook in preheated oven at 160 °C for 40 minutes. As soon as it is cold, put the cake  on a dish and decorated with icing sugar.


ZUCCHINE RIPIENE/STUFFED ZUCCHINI


Zucchine ripiene con patate Duchessa.

Ingr per 6 persone
6 zucchine – circa 200 gr. ognuna
160g   carne tritata di manzo (potete anche usare carne mista di maiale e manzo)
50g   parmigiano
1 cucchiaio di cipolla tritata
1 cucchiaio di erbe miste (timo, maggiorana, origano) 
 1 cucchiaio prezzemolo tritato
1 cucchiaio pangrattato
1 uovo
Zucchine ripiene appena sfornate
2 pizzichi di sale
1 macinata di pepe nero
PER LA SALSA DI POMODORO
2 cucchiai olio extravergine di oliva
750 ml passata di pomodoro
1 cipolla
1 pizzico di sale
1 macinata di pepe nero
1 cucchiaino di origano
6 foglie di basilico
COME PROCEDERE:
Preriscaldate il forno a 180°C (io ho usato il forno ventilato).
Lavate le zucchine e tagliate le estremità, poi tagliatele nel senso della lunghezza in circa 3 pezzi. Con l’apposito arnese svuotazucchine, togliete la polpa all’interno di ogni pezzo di zucchina e mettetela in un mixer per tritarla un pochino (basterà un attimo). Mettete in una ciotola poco più della metà della polpa ottenuta e gettate il resto (o tenetelo per altre preparazioni).  Aggiungete la carne tritata e gli altri ingredienti della ricetta (tranne quelli che servono per fare il sugo) e mischiate bene. Con questo composto riempite (aiutandovi con un cucchiaino) i pezzi di zucchina.
Togliete la polpa con lo svuota zucchine
PREPARATE IL SUGO DI POMODORO:
Mettete una casseruola sul fuoco con olio e cipolla tritata. Quando la cipolla sarà soffice e leggermente dorata, aggiungete il passato di pomodoro, quindi aggiungete sale, pepe, origano e basilico spezzettato a mano. Cuocete per soli 5 minuti perché poi finirà di cuocere nel forno.
Prendete ora una teglia da forno antiaderente, versate al suo interno la salsa di pomodoro e poi adagiatevi  i pezzi di zucchina ripieni. Spruzzate le zucchine con un filo di olio e spolveratele con un pizzico di sale e pepe. Mettete in forno a 180°C per 40 minuti, o di più se necessario. Durante gli ultimi 10 minuti, aumentate un po’ la temperatura a 240°C.
Le zucchine saranno pronte quando saranno leggermente abbrustolite sulla superficie e il sugo diventerà scuro e denso. Girate le zucchine ogni 15 -20 minuti per evitare che attacchino.
Servitele nei piatti coperte dalla salsa di pomodoro e accompagnate da un contorno di patate duchessa (troverete la ricetta nel blog).
ENGLISH TRANSLATION:
STUFFED ZUCCHINI
Ingr per 6 persone:
6 big    zucchini - about 200g  each
160g   ground meat - (I have used only beef, but you can mix with pork meat , if you like)
50g   reggiano cheese
1Tbsp   minced onion
1Tbsp  majoran, thyme, oregano
1Tbsp   parsley - minced
1Tbsp breadcrumb
1   egg
2 tsp   salt
1 fresh ground black pepper
FOR THE TOMATO SAUCE:
2 Tbsp  oil  EVOO - (extra virgin olive oil)
1 onion - fresh
1tsp   salt
1/2 tsp   pepper
1tsp   oregano
6 basil leaves cut in pieces with your fingers.
METHOD:
Light your oven and bring it to a temperature of 180°C (350F). I have used
convention oven.
Wash zucchini and cut the extremities,  then cut them longitudinally in about
three pieces. Then, with the proper tool :"Zucchini cutter" take away the internal  pulp of each piece of zucchini. Put the pulp in a robot and mince  just for a little. Keep only
3/4 of this pulp, throw away the other  (you can use for other recipe).
Put the minced zucchini pulp in a bowl and mix it with ground meat, and the
other ingredients of recipe (except for the ingredient of tomato sauce). With this mix, fill the pieces of zucchini (helping yourselves with a teaspoon).
Now prepare the tomato sauce:
In a saucepan put oil and chopped onion. When the onion is soft and golden (not brown),
add 750cc of tomato sauce; then add salt, pepper, oregano and basil. Cook for only 5 minutes, because it will cook in the oven.
Now, take a non- sticking baking pan, put inside your tomato sauce and, inside it,  the
pieces of filled zucchini. Season zucchini with few olive oil, salt and
pepper.
Put in the oven (180°C) for about 40 minutes or more if need. During the last 10 minutes increase temperature bringing oven to 240°C  (450F). Zucchini are ready when they are lightly
brown on the surface and when tomato sauce is dark , dense and not liquid.
Note: Every 15-20  minutes  turn zucchinis with a spoon.
Serve in a tray with the tomato sauce over and with Duchess potatoes as side dish (you will find recipe in this blog).
