BUCATINI ALL’AMATRICIANA/AMATRICIANA BUCATINI


 La ricetta tradizionale prevede il guanciale ma secondo me è meglio la pancetta affumicata. Provare per credere!
Bucatini all'Amatriciana: il segreto di Pandora è tanto sugo, tanta pancetta e una buona dose di pecorino!

Ingr. Per 2-3 persone
250 gr. bucatini
300 ml passata di pomodoro
1 cipolla tagliata a pezzetti piccoli
4 fette di pancetta affumicata tagliate a pezzetti
25 ml olio extravergine di oliva
50 gr pecorino grattugiato
1 rametto di timo
1 peperoncino secco
sale
COME PROCEDERE:
Mentre mettete a bollire l’acqua salata in una pentola alta, preparate il sugo nel modo seguente:
in un pentolino  fate soffriggere la cipolla e la pancetta nell’olio. Quando la cipolla risulta imbiondita aggiungete la passata di pomodoro, il peperoncino secco spezzettato con le mani, il rametto di timo (che toglierete alla fine) e un pizzico di sale. Cuocete il sugo per 15minuti (se restringe troppo aggiungete un po’ di acqua calda) e poi trasferitelo in una grande padella.
Lessate al dente i bucatini (senza spezzarli a metà, mi raccomando!) e una volta cotti trasferiteli nella padella con il sugo caldo. Aggiungete il pecorino e mischiate bene. Servite nei piatti e Buon Appetito!

ENGLISH TRANSLATION:

BUCATINI ALL'AMATRICIANA
Ingr. for 2 hungry persons 
250 gr. bucatini 
300 ml tomato sauce 
1 onion, cut into small pieces 
4 slices of smoked bacon cut into small pieces 
25 ml extra virgin olive oil 
50 gr pecorino cheese (grated) 
1 sprig of thyme 
1 hot chili pepper (dry)
Salt

HOW TO PROCEED:
While you are bringing  to boil the salted water in an high pot, prepare the sauce in the following way: in a little pan saute onion and bacon in the oil. When the onion is golden add the tomato sauce, chili chopped with your hands, the sprig of thyme (throw it away at the end) and a pinch of salt.
Cook the sauce for 15 minutes (if it restricts too much, add a little drops of  hot water) and then transfer it in a large frying pan.  Cook bucatini "al dente" (without breaking them in two halves, I  pray you!) and once cooked saute them in the pan with the hot sauce. Add pecorino cheese and mix well. Serve in dishes and good appetite!

UOVA MARGHERITA/DAISY EGGS


Un piatto semplice ma d'effetto. Servitelo a Pasqua, farete un figurone.

UOVA MARGHERITA
Ingr. per 4 persone
4 uova sode tagliate a metà
8 pezzetti di salmone affumicato (o  pezzetti di tonno sott’olio)
8 foglie di prezzemolo
Maionese tonnata
Semi di papavero per decorare
Un rametto di menta guarnire.

COME PROCEDERE:
Estraete i tuorli delle uova sode e metteteli in una ciotola. Sul fondo della metà dell’uovo mettere un pezzettino di salmone e una foglia di prezzemolo; coprite con la maionese tonnata. Disponete le uova così preparate in un piatto da portata,  copritele con il tuorlo schiacciato con lo schiaccia-aglio e cospargete il centro della margherita  con i semi di papavero. Aggiungete un rametto di menta per formare lo stelo del fiore.
Un piatto semplice ma d’effetto. 

ENGLISH TRANSLATION: 

DAISY EGGS
Ing.r for 4 people 
4 hard boiled eggs cut in halves 
8 pieces of smoked salmon (or little pieces of tuna in oil) 
8 leaves of parsley
Tuna mayonnaise  
Popp- seeds for decoration 
1 small sprig of mint for garnishing. 

HOW TO PROCEED: 
Extract the yolks of hard boiled eggs and place them in a bowl. set aside.
On the bottom of the eggs halves put a small piece of salmon and a leaf of parsley; cover with tuna mayonnaise. Arrange the eggs thus prepared in a dish, fill up the egg whites with the yolk crushed with a garlic crusher and sprinkle the center of the daisy with poppy seeds.
Add a sprig of mint to form the stem of the flower. A simple dish but meant for effect.

PASTA E CECI VECCHIA ROMA/OLD ROME PASTA AND CHICKPEAS SOUP


La ricetta della vera "pasta e ceci",  come si faceva a Roma sin dall'antichità!





Pasta e ceci secondo la ricetta della tradizione

Ingr per 4 persone:
300 gr ceci secchi ( lasciati a bagno per una notte)
Salsina a base di :olio, aglio, acciughe, pomodoro
200 gr pasta formato cannolicchi (ditali) lisci (quelli più grandi)
1 dl di olio
2 pomodori medi , spellati e tagliati a pezzetti.
2 spicchi di aglio
6 acciughe sott’olio spezzettate
Un rametto di rosmarino (piccolo, solo gli aghi)
Sale
Pepe

COME PROCEDERE:
In una pentola piena d’acqua, mettere a cuocere i ceci insieme all’aglio e al rosmarino. Quando sono cotti (circa 30 minuti, ma anche meno, dipende dal tipo di ceci), prendetene un mestolino e frullateli, (insieme ad un pò di liquido) poi rimettete la pappetta ottenuta nella pentola insieme alla salsina seguente:
in un pentolino mettete l’olio, l'aglio e le acciughe, fate scaldare fin quando le acciughe si sono un po’ sciolte, unite quindi il pomodoro a pezzetti e fate cuocere per 2 minuti. Unite l’intingolo alla minestra.
Se vedete che la minestra si è asciugata troppo, aggiungete altra acqua calda. Salate e poi unite i cannolicchi. Portate a cottura e servite nei piatti cospargendo con pepe nero macinato al momento. Se volete potete aggiungere anche un filo di olio crudo.

Frullate i ceci cotti con un pò di liquido
ENGLISH TRANSLATION: 

OLD ROME PASTA AND CHICKPEAS SOUP (traditional roman recipe)
Ingr: for 4 persons:
300 gr dried chickpeas ( soaked overnight)
200 gr pasta “cannolicchi” (ditali) shape the bigger you find.
1 dl of oil
2 medium tomatoes, skinned and cut into little cubes.
2 Garlic cloves
6 anchovy fillets in olive oil (chopped)
1a sprig of rosemary (small, only the needles)
salt
Fresh ground black pepper

METHOD:
In a pot full of water, cook the chickpeas together with the garlic and rosemary. When they are cooked (about 30 minutes, but also less, depends on the type of chick peas), take 1 handful of chickpeas and mush it (with some of the liquid) in a mixer and put it again in the pot together with the follow sauce: in little saucepan  put the oi, garlic and anchovies, warm up until the anchovies are a little liquefied, then add the chopped tomatoes and cook for 2 minutes. Add this sauce to the soup. If you see that  soup is  too dry, add more hot water. Salt and then join pasta. Bring to cooking, throw away garlic cloves and serve  in dishes sprinkled with freshly ground black pepper. If you want you can also add some drops  of raw oil.

SPAGHETTI CON BROCCOLETTI E MOLLICA/SPAGHETTI WITH BROCCOLI AND BREADCRUMBS


Provateli, sono divini!
Ingr. Per 4 persone:
350 gr spaghetti
700 gr broccoletti calabresi
120 gr pangrattato
50 gr acciughe sott’olio
100 gr pomodori secchi sott’olio
40 gr capperi
50 gr olive nere denocciolate
2 spicchio di aglio
1 scalogno tritato
1 peperoncino
100 ml Olio EVO
Sale
Pepe

COME PROCEDERE:
In una grande padella fate sciogliere le acciughe insieme  a qualche  cucchiaio di olio e all’aglio, aggiungete quindi i pomodori secchi tagliati a listarelle, i capperi e le olive. Fate cuocere il tutto per altri 2 minuti, poi spegnete il fuoco e mettete da parte. In un altra padella (antiaderente)  fate tostare il pangrattato (mescolando continuamente) e quando sarà ben colorito unitelo all’intingolo di acciughe mescolando bene.
Pulite e lavate i broccoletti privandoli dei gambi più grossi. Fateli lessare in una pentola con abbondante acqua salata che poi conserverete per lessare la pasta, infine scolateli e ripassateli in padella con abbondante olio, scalogno, peperoncino. Aggiustate di sale e tenete da parte.
Cuocete gli spaghetti al dente e poi saltateli nella padella con i broccoli. Distribuite gli spaghetti su un piatto da portata cospargendo con il condimento di pangrattato tostato. Ottimi!

ENGLISH TRANSLATION:
 
SPAGHETTI WITH BROCCOLI AND BREADCRUMBS
Ingr For 4 persons:
Broccolo calabrese
350 gr spaghetti
700 gr broccoli calabresi
120 gr breadcrumbs
50 gr anchovies in oil
 100 gr dried tomatoes in oil
 40 gr capers
50 gr stoned black olives
2 garlic clove
 1 shallots chopped
1 chili pepper
100 ml Oil EVO
salt
pepper

HOW TO PROCEED:
In a little frying pan dissolve the anchovies with few spoons of oil and garlic, then add the dried tomatoes cut into strips, capers, and olives. Cook for about 2 minutes, then turn off the fire and set aside.
In another non sticking frying pan  toast the bread crumbs (without oil) till  it will be colorful then stir in the anchovies  sauce mixing well.
Clean and wash the broccoli depriving them of the bigger stems. Let them boil in a pot with salted water (you  will conserve it to boil pasta), then drain and sauté  in a frying pan with abundant  oil, shallot, chili. Taste for salt and set aside. Cook spaghetti al dente and then toss them into the pan with the broccoli. Distribute  spaghetti on a tray sprinkled with seasoning of toasted bread crumbs. Very Very good!

ZUPPA INGLESE/ENGLISH SOUP

Una ricetta della tradizione Italiana, malgrado il suo nome ...

Ingr per 6-8 persone.
400 gr pan di spagna (già pronto )
8 tuorli uova
180 gr zucchero
100 gr farina setacciata
50 gr cacao amaro in polvere (setacciato)
1 lt di latte
La scorza di mezzo limone biologico
Alchermes
Rum
1 manciata di frutta candita (facoltativo)
4 ciliegie candite per la decorazione.

COME PROCEDERE:
PREPARARE LA CREMA:
Mettere il latte in una pentola antiaderente e aggiungere la scorza di limone, quindi portate a bollore. Togliere la pentola dal fuoco e lasciare riposare per 15 minuti.
Nel frattempo lavorate i tuorli con lo zucchero, unite la farina e mischiate bene. Rimettere il latte sul fuoco e lasciarlo scaldare; prima che raggiunga il bollore, toglietelo dal fuoco e versatelo poco alla volta sul composto di uova. Metre fate questa operazione, girate bene con un cucchiaio di legno per far amalgamare bene il tutto. Mettete questo composto sul fuoco moderato e mescolate continuamente fino a che la crema non si è addensata (in genere prima che raggiunga il bollore).
Quando la crema è pronta, versatela in due ciotole diverse e in una aggiungete il cacao mescolando bene per farlo incorporare al composto. Infine,  appoggiate la pellicola a contatto delle 2 creme per non farle seccare in superficie.
Nota: se volete, potete aggiungere alla crema, una volta fredda, anche una manciata di frutta candita.
TAGLIARE IL PAN DI SPAGNA:
Tagliate il Pan di spagna in fettine spesse circa 1cm, larghe 4 cm e lunghe 15 cm.
Appoggiate le strisce così preparate in due piatti diversi e spruzzatele leggermente qua e là (poco se no si inzuppano troppo e rischiate che si rompano),  una parte con l’alchermes e l’altra con il rum.
CONFEZIONARE IL DOLCE:
Prendete  un vassoio ovale di pyrex o porcellana, abbastanza fondo e capiente, cospargetelo con un velo di crema bianca; adagiate sulla crema le fettine di pan di spagna in modo che conservino la forma ovale del vassoio (se necessario rifilarle con un coltello). Sopra questo strato versate la crema bianca rimanente. Fate un altro strato con il Pan di spagna al rum, copritelo con la crema al cioccolato e infine decorate, utilizzando una siringa,  con la panna montata. Cospargete con codette di cioccolato e guarnite con qualche ciliegia candita. Mettete in frigo fino al momento di servire.   

ENGLISH TRANSLATION: 

ENGLISH SOUP 
400 g   sponge cake  (ready-made)
8   eggs - only yolks
180gr   sugar
100   flour - allpurpose
1 lt milk
Alchermes
Rum
1 lt whipping cream
4 candied cherries
1 handful candied fruit  to put inside cream (Optional)

METHOD: 
 
PREPARE THE CUSTARD: Put the milk in a non-stick pan and add the lemon zest, then bring to a boil. Remove the pot from the heat and leave to stand for 15 minutes. In the meantime work the yolks with the sugar, add the flour and mix well. Put the milk on the fire and let it warm up; before it reaches the boil, remove from heat and pour it a little at a time on the mix of eggs and sugar. While you do that, turn it well with a wooden spoon to mix everything well.
Put this compound on moderate heat and stir continuously until the custard has thickened (usually before it reaches the boil).  When custard is ready, pour it into two different bowls: over one stir in the cocoa mixing well. Finally, place the film in contact with the 2 custards, for they do not dry on the surface.
Note: if you want, you can add to the custard, once cold, even a handful of candied fruit.

CUT THE SPONGE CAKE:
Cut sponge cake in slices 1cm thick, 4 cm wide and long 15 cm. Place the strips thus prepared in two different dishes and lightly sprinkle here and there (little, because sponge cake absorb too much and could  break), one part with alkermes, and the other with rum.
MAKE THE CAKE:
Take an oval pyrex  or porcelain tray, quite deep and capacious, sprinkle it with a veil of white custard; put over it the alkermes slices of sponge so that they keep the oval shape of the tray (if necessary cut a little with a knife).  Above this layer pour the white custard remaining. Make another layer with the rum  sponge cake, cover it with the chocolate custard and finally decorate, using a sac a poche, with whipped cream. Sprinkle with mini “tails of chocolate” and garnish with some candied cherries. Refrigerate until serving.

POMODORI COL RISO/TOMATOES STUFFED WITH RICE

Un piatto romano, tradizionalmente accompagnato da patate.
A Roma, ogni tavola calda o rosticceria che si rispetti, li ha in bella vista sul bancone!Possono essere mangiati sia caldi che freddi a seconda della stagione!
I pomodori col riso e patate appena sfornati!

Prima di essere infornati
Ingr per 2-4 persone:
4 grandi pomodori
5 cucchiai riso Arborio
2 spicchi di aglio schiacciati
3 cucchiai prezzemolo tritato
3 patate grandi tagliate a spicchi.
Olio
Sale
Pepe.

COME PROCEDERE:
Lessate il riso in acqua salata per 7 minuti. Scolatelo e mettete da parte.
Lavate e asciugate i pomodori, tagliate la parte superiore che servirà da coperchio. Svuotateli con un cucchiaino e mettete la polpa in una ciotola. Aggiungere gli spicchi d’aglio schiacciati, il prezzemolo, il sale, il pepe, un filo d’olio, infine il riso. Mescolate bene. Riempite i pomodori fino all’orlo, copriteli con il “cappello” che avevate tagliato, spruzzate la superficie con poco olio, salate e pepate. Adagiateli in un tegame unto con 5 cucchiai di olio. Mettete tutto intorno le patate precedentemente tagliate a spicchi grandi e condite con olio, sale  e pepe, quindi infornate a 180° per 30  minuti.
*Nota: dopo la cottura, le patate non devono risultare molto abbrustolite. 
Scegliete pomodori adatti ad essere riempiti.

ENGLISH TRANSLATION:

TOMATOES STUFFED WITH RICE.
 Ingr for 2-4 persons:
4 large tomatoes
 5 tablespoons Arborio rice (the one you use to make risotto).
2 cloves of garlic mushed
 3 tablespoons chopped parsley
 3 large potatoes cut into wedges.
Oil Salt and pepper.
*Note: after cooking, potatoes must be not very roasted.
HOW TO PROCEED:
Togliete la polpa all'nterno del pomodoro.
Boil the rice in salted water for 7 minutes. Strain and set aside.
Wash and dry the tomatoes, cut the top which will serve as lid. Empty them with a teaspoon and put the pulp in a bowl. Add mushed garlic, parsley, salt, pepper, a drizzle of oil, finally add  rice. Mix it well.
Fill the tomatoes up to the edges , cover them  with the "cap" you have previously cut, sprinkle the surface with a little oil, salt and pepper. Lay them  in an oiled baking pan. Put  all around the potatoes previously seasoned with oil, salt and pepper, then bake at 180° for 30 minutes.

CALAMARATA CON GAMBERI, ZUCCHINE E POMODORINI/CALAMARATA WITH SHRIMPS, ZUCCHINI AND CHERRY TOMATOES.

Pronta  per essere servita in tavola!
Ingr. Per 4 persone
400 gr. di pasta formato “calamarata”
500 gr. gamberi
3 zucchine medie
15 pomodorini ciliegia tagliati in quattro spicchi.
3 spicchi d’aglio
½ bicchiere di vino
10 cucchiai Olio
Sale
Pepe
4 cucchiai prezzemolo tritato per guarnire i piatti.
1 cucchiaio di aceto per lessare i gamberi.

COME PROCEDERE:
Sbollentate i gamberi in acqua acidulata per cinque minuti. Scolarli, privateli del guscio e delle teste e poi metteteli da parte.
Lavate e tagliate le zucchine in una julienne piuttosto grossa.
In una larga padella fate imbiondire l’aglio ( a spicchi interi) nell’olio. Unite i gamberi e lasciate rosolare per 2 minuti. Aggiungete il vino e fatelo evaporare. Unite le zucchine, salate e pepate, quindi fatele insaporire per 5 minuti. Alla fine unite i pomodorini, mescolate bene e fate cucocere per altri 5 minuti. Alla fine togliete gli spicchi di aglio interi.
Lessate la pasta in acqua bollente salata. Scolatela e ripassatela nella padella con il condimento.
Impiattate guarnendo con prezzemolo tritato.

ENGLISH TRANSLATION:

CALAMARATA WITH SHRIMPS, ZUCCHINI AND CHERRY TOMATOES.
Ingr  For 4 persons:
 400 grams of pasta "calamarata" shape
 500 gr. Shrimps
 3 medium zucchini
 15 cherry tomatoes cut into four wedges
3 Cloves of garlic
½ cup of wine
 10 tablespoons oil
Salt
Pepper fresh ground
4 Tbsp Parsley (chopped) for garnishing
1 tablespoon vinegar to boil shrimps

HOW TO PROCEED:
Parboil shrimps in acidulated water for five minutes. Drain, remove the shell and heads and set aside. Wash and cut the zucchini into a rather large julienne. In a large pan fry garlic (whole cloves) in the oil. Add the shrimp and let them brown for 2 minutes. Add the wine and let it evaporate. Add grated zucchini, salt, and pepper, then season for 5 minutes. At the end add the tomatoes, mix well and let cook for another 5 minutes. At the end remove garlic cloves.
Boil the pasta in boiling salted water. Cook al dente and sauté in the pan with the sauce. Serve in dishes garnishing with parsley. Sooo good!
