CROSTATA DI FRAGOLE ALLA MERINGA/MERINGUE STRAWBERRY PIE

Per dare il benvenuto alla primavera


* Nota: per questa torta vi occorre uno stampo apribile di 25 cm di diametro
Ingr per 6 persone
PER LA PASTA FROLLA:
250 gr. farina 00
125 gr burro a temperatura ambiente
100 gr zucchero
2 tuorli + un uovo intero
Una bustina di vanillina
1 pizzico di sale.
PER LA MERINGA:
160 gr di albumi (circa 4 uova)
160 gr zucchero  a velo
1/4 cucchiaino di cremor tartaro o  lievito in polvere
Sale
PER LA GUARNIZIONE:
500 gr fragole
1 fialetta di aroma di Rum (oppure un bicchierino di liquore al rum)
1 cucchiaio di zucchero
1 cucchiaio di zucchero a velo

COME PROCEDERE:
Preparare la crosta:
Spalmate sulle fragole uno strato di meringa con la spatola
Su una spianatoia mettere la farina a fontana mischiata con lo zucchero. Fate un buco al centro e mettervi le uova, un pizzico di sale e il burro a pezzetti. Amalgamate bene il tutto e poi formate una palla, avvolgetela nella pellicola e mettetela a riposare in frigo per mezzora.
Pulite le fragole e mettetele in una ciotola con il rum e un cucchiaio di zucchero, mescolate bene e poi fatele riposare in frigo per mezzora.
Imburrate lo stampo apribile e poi cospargetelo con pangrattato.
Mettete il resto nella siringa per formare le nuvolette
Prendete la pasta e stendetela con il mattarello in modo da ottenere un disco un po’ più largo del diametro della tortiera. Con questo andate a rivestire lo stampo. Pizzicate i bordi in modo che si formi un bel cordoncino e bucherellate la pasta con la forchetta per evitare che in forno gonfi. Infornate per  15 minuti a 180°. Tirate fuori la teglia dal forno e lasciate intiepidire. Tagliate le fragole a fette e mettetele sulla base della torta.
Preparate la meringa: mettete le chiare in una ciotola d'acciaio insieme ad una punta  di lievito in polvere, 1 cucchiaio di zucchero a velo.Utilizzando le fruste elettriche, sbattete a bassa velocità fino a che le chiare  diventano spumeggianti.  Gradualmente (1 cucchiaio alla volta) aggiungete il resto dello zucchero e aumentate a velocità media; sbattete fino a che risulta una neve ben ferma.Spalmate le fragole con uno strato di meringa, aggiungete qualche fragola sui bordi e al centro; mettete la rimanente meringa  in una sac a poche per andare a formare lo strato di nuvolette. Infornate di nuovo a 180° per altri 10 minuti o fin quando la meringa risulti dorata. Estraete il dolce dal forno, lasciate intiepidire e cospargete leggermente con zucchero a velo.

MERINGUE STRAWBERRY PIE
Ingr.  for 6 people 
FOR CRUST: 250 g flour AP 
125 gr butter at room temperature
100 gr sugar 
2 egg yolks plus 1 whole egg 
1/2 tsp vanilla powder 
1 pinch of salt.
 FOR THE MERINGUE: 
160 gr of egg whites (about 4 eggs) 
160 gr sugar 
1 pinch salt
1/4 cream tartar 
FOR GARNISHING: 
500 gr strawberries 
1 Vial  Rum fragrance (or a little glass of rum) 
1 tablespoon of sugar 
1 tablespoon powdered sugar 
METHOD:
Prepare the crust:
On a pastry board put the flour mixed with sugar. Make a hole in the middle and put the eggs, a pinch of salt and the butter in small pieces. Mix everything well to make a  ball, wrap it with plastic wrap and put it to rest in the fridge for half an hour. Clean the strawberries and put them in a bowl with the rum and a tablespoon of sugar, mix well and then let them rest in the fridge for half an hour. Lightly butter the mold , and then sprinkle with  bread crumbs.
Take the dough and roll it out  in order to obtain a disc a little wider than the diameter of the cake pan. With this you go to coat the mold. Pinch the edges so that it forms a beautiful border; punch the dough with a fork to prevent inflating. Bake for 15 minutes at 180 °. Pull out the mould from the oven and let cool slightly. Cut the strawberries into slices and put them on the basis of the cake. Prepare the meringue:
Using elecric mixer, beat egg whites in large stainless steel
bowl at low speed until foamy. Beat in cream of tartar and 1 tablespoon
sugar. gradually beat in remaining sugar, 1 tablespoon at a time. Beat at
medium speed until stiff glossy peaks form, about 8 minutes.
 Using a spatula,  cover strawberries with a layer of  meringue, add a few strawberry on the edges and at the center and put the remaining meringue in a sac a poche  to form little clouds. Bake again at 180° for other 10 minutes or until the meringue is golden brown. Remove the cake from the oven, let cool  and sprinkle lightly with confectioners' sugar.

POLPETTE AL FORNO RIPIENE DI FUNGHI E SCAMORZA/BAKED MEATBALLS FILLED WITH SCAMORZA AND MUSHROOMS

Salutari perchè cotte in forno
Ingr. per 18 polpette di circa 4 cm di diametro:
300gr. Carne di manzo tritata
300 gr. Carne di maiale tritata
2 uova
70 gr. Pangrattato
3 cucchiai parmigiano grattugiato
60 gr. Di scamorza affumicata tagliata a cubetti
100 gr. Di funghi misti surgelati.
Un profumino di funghi e affumicato da svenire!
100 gr. Burro
Sale
Pepe.

COME PROCEDERE:
Decongelate i funghi e tagliateli in grossi pezzetti dopo averli strizzati bene.In una ciotola mischiare la carne di manzo con la carne di maiale, aggiungete le uova, sale, pepe, parmigiano e pangrattato. Mischiare bene.  Prendete un po’ di impasto e formate delle grosse polpette larghe circa come una pallina da ping pong.  All’interno di queste ricavate un buco dove metterete i funghi  e la provola a pezzettini. Ricomponete la polpetta chiudendo bene sul ripieno.  Adagiatele poi in una teglia antiaderente imburrata e cospargete ancora con fiocchetti di burro.Cuocete in forno a 180° per 10 minuti, abbassate la temperatura a 160° e fate cuocere per altri 10 minuti.

ENGLISH TRANSLATION:
BAKED MEATBALLS FILLED WITH SCAMORZA AND MUSHROOMS
Ingr.per 18meatballs of about 4 cm diameter: 
300gr.  minced beef meat
300 gr. minced pork meat

3 tablespoons grated parmesan 
60 gr. smoked provola cheese diced 
100 gr. frozen mushrooms (mix of various mushrooms)

Chiudete il ripieno all'interno
Salt and pepper.

HOW PROCEEDING: 
Defrost mushrooms, squeeze well and cut into pieces. In a bowl mix the beef with the pork, add the eggs, salt, pepper, parmesan cheese and breadcrumbs. Mix it well. Take a little bit of dough and make the meatball inside which you will put the mushrooms and the provola cheese. Re-arrange the patty closing well over the filling. Then lay them down in a greased non-stick baking pan and sprinkle again with butter flakes. Bake at 350°F for the first 10 minutes, turn down the temperature to 310°F and bake for a further 10 minutes.

PENNE ALL’ARRABBIATA/ANGRY PENNE


Penne all'arrabbiata: piatto semplice, veloce e gustoso.
Ingr. Per 4 persone.
400 gr penne
2 spicchi di aglio tagliati a pezzettini
2-3 peperoncini secchi
6 cucchiai di olio
400 ml  passata di pomodoro (o pelati tagliati a pezzetti)
Fate soffriggere l'aglio per pochi secondi
6 cucchiai prezzemolo
6 cucchiai di Olio
1 pizzico Sale 

COME PROCEDERE:
Fate soffriggere l’aglio nell’olio per pochi secondi (deve rimanere biancastro e non dorato), aggiungete la passata di pomodoro, il sale,  il peperoncino sbriciolato con le mani e 2 cucchiai di prezzemolo tritato. Fate cuocere per 15 minuti (se vedete che si restringe troppo, aggiungete qualche goccio di acqua di cottura della pasta).
Nel frattempo, lessate la pasta in abbondante acqua salata. Scolatela al dente e ripassatela nella padella con il sugo. Guarnite i piatti col rimanente prezzemolo tritato. Semplice e veloce. Buon appetito.
Aggiungete poi il pomodoro e il peperoncino...
ENGLISH TRANSLATION:
ANGRY PENNE 
Ingr.  For 4 people. 
400 gr Penne pasta 
2 garlic cloves cut into little  pieces 
2-3 dried hot chili chiliespeppers
400ml tomato sauce (or peeled tomatoes chopped) 
6 tablespoons parsley 
6 tablespoons of oil 
1 pinch salt 

HOW TO PROCEED:
Fry the garlic in oil for few seconds (it must remain white and not gold), add the tomato sauce, salt, crushed 8with your fingers) chili and 2 tablespoons of chopped parsley. Cook for 15 minutes (if you see that shrinks too much, add a few drop ofthe pasta water). In the meantime, boil the pasta in abundant salted water. Cook al dente and saute in the pan with the sauce. Garnish dishes with the remaining chopped parsley. Simple and fast. Good appetite.




SFORMATO DI MELANZANE/EGGPLANT FLAN

Un antipasto da servire caldo, tipiedo o freddo. Una vera delizia
Ingr per 6 persone:
1 melanzana media
1 uovo battuto
50 gr pecorino grattugiato
50 gr pangrattato
1 spicchio d’aglio schiacciato
2 cucchiai prezzemolo tritato
350 ml besciamella
Un pizzico di Sale
Una macinata pepe
Olive nere, maionese, riccioli di zucchine crude e pomodorini per la guarnizione (facoltativo)

COME PROCEDERE:
Lavate la melanzana lasciando il picciolo, fate un taglio a croce sulla base e poi lessatela in pentola a pressione con poca acqua per 15 minuti dall’inizio del fischio. Mettetela in uno scolapasta e lasciatela raffreddare completamente. Appena pronta eliminate il gambo e mettetela in una ciotola, schiacciatela bene con una forchetta e poi aggiungete tutti gli altri ingredienti mettendo la besciamella per ultimo. Mescolate bene fino ad ottenere un composto non troppo liquido che verserete in uno stampo di silicone di 20 cm di diametro (se non lo avete, imburrate uno stampo da budino della stessa dimensione e poi cospargetelo con pangrattato). Infornate a 180° per circa mezzora o fin quando la superficie risulterà dorata. Guarnite con verdure miste e olive a piacimento.

 ENGLISH TRANSLATION: 
L'impasto non deve essere troppo liquido
 EGGPLANT FLAN
Ingr. for 6 people:
1 medium eggplant
1 beaten egg
50 gr pecorino (grated)
50 gr breadcrumbs
1 clove garlic (crushed) garlic
2 tablespoons chopped parsley
350 ml bechamel
1 pinch of salt
1 fresh ground pepper
black olives, mayonnaise, curls of raw zucchini, basil leaves and tomatoes for garnishing (optional) 

HOW TO PROCEED:
Prima di essere infornato.
Wash the eggplant leaving the stalk, make a cross cut on the base and then boil it in a pressure cooker with a little water for 15 minutes from the beginning of the whistle. Put it in a colander and let it cool down completely. As soon as ready eliminate the stem and put it in a bowl, mush it well with a fork, then add all  the other ingredients,  putting the bechamel sauce at the end.
Mix well to obtain a mixture not too liquid; pour it into a 20 cm diameter silicon mold (if you haven’t, lightly butter an alluminium pudding mold, same size,  and then sprinkle with  bread crumbs).  Bake at 180° for about 30’, or until the surface will be golden. Garnish with vegetables, mayonnaise and olives as you like.

CELLENTANI CON DADOLATA DI VERDURE/CELLENTANI WITH DICED VEGETABLE


Piatto primaverile
500 gr. di pasta formato cellentani.
4 cucchiai piselli surgelati
1 peperone rosso tagliato a pezzetti + ½ per la guarnizione
2 pomodori medi spellati e tagliati a cubetti
1 cipolla tagliata a dadini
2 zucchine tagliate a cubetti
1 gambo verde di sedano tagliato a pezzetti
1 carota tagliata a dadini
8 foglie di basilico spezzettate + 8 foglie intere per guarnire
8 cucchiai di Olio
1/4 bicchiere di vino bianco secco
150 gr mozzarella tagliata a cubetti.
Sale e pepe

COME PROCEDERE:
Mettete l’olio in una padella antiaderente e fate soffriggere la cipolla, quando sarà leggermente colorita aggiungete  tutte le verdure (tranne il pomodoro che metterete alla fine) spruzzate con il vino bianco e lasciate cuocere, mescolando spesso,  finché risulteranno tenere ma ancora al dente. 5 minuti prima della fine della cottura aggiungete anche il pomodoro a cubetti, salate, pepate e spegnete il fuoco. Lasciate intiepidire e  poi aggiungete i cubetti di mozzarella.
Lessate la pasta in abbondante acqua salata, scolatela al dente ed insaporitela nella padella con le verdure mescolando bene a fuoco moderato . Guarnite con basilico fresco  e cerchi di peperone crudo.

ENGLISH TRANSLATION:

CELLENTANI WITH DICED VEGETABLE
 500 gr. Cellentani pasta
4 Tablespoons frozen peas
1 red bell pepper cut into small pieces, plus ½ for garnishing
2 medium tomatoes peeled and cut into cubes
1 onion diced
2 zucchini diced
1 green stalk of celery cut into little pieces
1 carrot diced
8 basil leaves minced with hands plus  8 whole leaves for garnishing
8 tablespoons of oil
1/4 cup dry white wine
150 gr mozzarella cheese cut into little cubes.
Salt and pepper
HOW TO PROCEED:
Put the oil in a nonstick frying pan and gently fry the onion, when it will be slightly colorful add all the vegetables (except the tomato that you will  put at the end), sprinkle with white wine and cook, mixing from time to time, until vegetable will be tender but still “al dente”. 5 Minutes before the end of the cooking also add the tomato cubes, salt and pepper and turn off the fire. Let cool slightly, then add the mozzarella cubes. Boil pasta in abundant salted water, cook al dente and  saute at moderate fire into the pan with vegetables. Garnish with fresh basil and rings of green bell pepper.

TORTA DI PERE AL CACAO/COCOA PIE WITH PEARS

Un semplice ripieno di pere e biscotti per la gioia dei vostri palati.
*Per questa torta vi occorre uno stampo di 24 cm di diametro con bordo apribile.
Ingr. per 8 persone.
350 gr. Farina 00
25 gr. Cacao amaro
200 gr. Burro a pezzetti  (freddo)
120 gr. Zucchero
1 uovo intero
400 gr. Biscotti Frollini(oppure ai cereali)
2 pere grandi (tagliate a cubetti di 1 cm di lato).
2 cucchiai zucchero a velo
1 cucchiaio di burro per lo stampo
Farina per lo stampo.

COME PROCEDERE:
Prendete lo stampo, imburratelo e infarinatelo. Pelate e tagliate le pere in cubetti di circa 1 cm di lato.
Rompete i biscotti aiutandovi con un mattarello.
Mettete la farina, il cacao e il burro in un robot da cucina e mischiate per 2-3 minuti. Mettete il composto così ottenuto su una spianatoia e fate la fontana.  Mettete nel buco lo zucchero e l’uovo e mischiate velocemente con le mani per ottenere una palla liscia. Mettetela a riposare in frigo (avvolta con pellicola) per circa 30 minuti. Tagliate la palla in due pezzi (uno più grande dell’altro).
Stendete il pezzo più grande per ottenere un disco di pasta con il quale fodererete il fondo della tortiera (lasciate che la pasta in eccedenza tocchi i bordi). Coprite il fondo con i biscotti tritati e sopra questi ponete i pezzetti di pera. Coprite con l’altro disco e sigillate bene i bordi con la pasta in eccedenza del primo disco.
Mettete in forno preriscaldato a 160° per circa 40 minuti.
Quando il dolce è freddo, spolverizzatelo con lo zucchero a velo e servite.

ENGLISH TRANSLATION:

COCOA PIE WITH PEARS
Ingr. per 8 persone
350 g   flour - all purpose
25 g   cocoa powder (bitter)
200 g   butter (cold and cut in cubes)
120 g   sugar
1   egg - whole
400  gr.   cookies - or graham crakers (cracked)
2   pears - big (cut in 1 cm pieces)
2 Tbsp icing sugar
1 tsp   butter - for the stamp (24 cm diameter)
Flour for the stamp

METHOD:
Take the stamp (with board that can be open) and butter it, than cover with few flour.
Peel and cut pears in little cubes (about 1 cm side).
Crack the cookies with a rolling pin.
Put flour, cocoa and butter (very cold) in a food processor and mix for 2-3
minutes. Put then the mixture on a rolling board and make the fountain.
Put in the hole sugar and egg and mix speedly with your hands.  You will
obtain a ball, cover it with a film and put to rest  in the refrigerator for 30'. Cut the ball in two pieces (one bigger than the other).
Lay out the bigger piece of dough  till you obtain a disc. Put this disc in
the cake pan (leaving the excess of dough attached on the boards). Over this, make a layer of cookies, and over this, put pears.
Cover with the other disc of dough and close with the excess of the
previous disc (like you are making a pie).
Put in the oven at 160 °C for about 40 minutes or more if need.
When cake is cold spread it with icing sugar and serve.

POLLO IN CARPIONE CON CIPOLLE/CARPIONE CHICKEN WITH ONIONS

Una ricetta fresca da preparare in anticipo.
Ingredienti per 2-3 persone:
1 petto di pollo intero
10 foglie di salvia grandi
250ml. Acqua
250ml aceto di mele (o aceto bianco)
40 gr. di zucchero
2 cipolle medie
4 cl olio ( circa 4 cucchiai per soffriggere le cipolle)
1 uovo grande
sale
pepe
1 tazza pangrattato
olio semi di arachide per friggere.

COME PROCEDERE:
Preparare il petto di pollo tagliandolo a fette non troppo sottili (in pratica lo divido a metà e poi taglio le due metà in altrettante metà; dovrete ottenere dei filetti di pollo spessi almeno 1,5 cm.
Passate quindi i filetti prima nell'uovo (salato e pepato) e poi nel pangrattato e teneteli da parte in frigorifero.
Nel frattempo preparate il carpione: in un pentolino versate l'acqua, l'aceto, lo zucchero e metà delle foglie di salvia. Fate sobbolire per circa 20' a fuoco medio fin quando si riduca di quasi la metà. Quando è pronto spegnete il fuoco e mettete da parte.
A questo punto mettete l'olio di oliva in una padella media  e fate soffriggere per circa 5' le cipolle tagliate a fettine non troppo sottili insieme alle 5 foglie di salvia rimanenti. Quando le cipolle si saranno insaporite, potrete aggiungere il liquido del carpione che avete precedentemente preparato. Lasciate sobbollire a fuoco lento finchè le cipolle saranno tenere e trasparenti.
Intanto potete friggere i filetti di pollo impanati e dopo che li avrete scolati bene dall'olio poggiandoli su carta assorbente, adagiateli in un contenitore d'alluminio con le pareti alte. La dimensione del contenitore deve essere di misura precisa, in modo che i filetti siano uno vicino all'altro.
Versate poi sui filetti il liquido del carpione che nel frattempo si sarà raffreddato. Coprite con carta d'alluminio e tenete in frigo fino al momento di servire in tavola magari tirateli fuori un'oretta prima in modo che non siano proprio ghiacciati. Meglio preparare questa ricetta la mattina per la sera in modo che il pollo   insaporisca bene. Ottimo anche il giorno dopo accompagnato da zucchine trifolate o insalatina. Buon appetito.
English translation:
CARPIONE CHICKEN WITH ONIONS
Ingredients for 2-3 people:
1 chicken breast whole
10 sage leaves large

1 cup bread crumbs

METHOD:
 Prepare the chicken breast by cutting it into thick slices (in practice, divide them  in 2 halves and then cut them into 2 other halves; you'll have to get fillets thick at least 1.5 cm. Put fillets in beated egg with salt and pepper and then breadcrumb.  Set aside in the refrigerator. In the meantime, prepare the sauce: in a small saucepan pour the water, vinegar, sugar and half of sage leaves. Let it boil at moderate fire for about 20' and until it reduces of  half. When ready turn off the fire and set aside. At this point put the olive oil in a medium skillet and sauté onions, together with the 5 sage leaves remaining, for about 5 minutes. When the onions will be flavored, you can add the liquid you have previously prepared (water and vinegar).
Leave to simmer over low heat until the onions are soft and transparent.  Now you can fry the chicken fillets and when they are golden brown drain on absorbent paper;  arrange them in an inox container. The size of the container must be precise measurement, so that fillets are close to one another. Pour the liquid over chicken. Cover with aluminum foil and keep in the fridge until it is time to serve on the table (remember to  pull it out an hour before so that they are not frozen). Better to prepare this recipe the  morning for the evening so that the chicken soaks up well. Excellent also the next day with zucchini or salad as side dish. Good appetite.
